Beetroot Masala Recipe / Beetroot Curry / Beetroot Poriyal / How to Make Beetroot Masala

I always adore the colour of beets. Beetroot has many health benefits. This is an interesting way to cook Beets easily. It’s a yummy and healthy side dish for everyone. Beets are high in fibre, immune-boosting vitamin C, essential minerals like potassium and manganese.

Beetroot masala is a spicy curry which taste good as a side dish for rice and roti. I can have this Beetroot Masala even everyday with rice. Beetroot Masala is a healthy choice for packing in your kid’s lunch boxes. I am sure kids will eat beetroot if cooked this way.

Ingredients for Beetroot Stir Fry:

Beetroot – 2 big (sliced into small pieces)
Onion / Savala – 2 medium
Tomato – 2 medium
Vegetable Oil – 2 tbsp.
Mustard Seeds – 1 tsp.
Curry Leaves – 1 sprig
Fennel Seeds – ½ tsp.
Turmeric Powder – ½ tsp.
Black Pepper Powder – 1 tsp.
Salt – to taste
Water – ¼ cup

How to Make Beetroot Stir Fry:

Chop beetrrot to half inch cubes. Chop onion and tomatoes.

Heat oil in a pan. Splutter Mustard Seeds and Fennel Seeds. Next add Onion and Curry Leaves. Saute until Onion turns translucent. Add chopped Tomatoes and Salt. When Tomatoes turn mushy, simmer the flame and add the chopped Beetroot and cook for 3 to 4 minutes. Continue sautéing. Add ¼ to ½ cup of Water. Once the Beetroot absorbs the water, add Turmeric Powder and sauté it. Next add the Black Pepper Powder and sauté. Cook until Beetroot turns soft. Turn off the stove.
Beetroot Masala goes well with rice.

My Recipe Notes on Beetroot Masala for Chappathi:

1. Use fresh Beetroot.
2. If you prefer you can add 1 tbsp. Urad Dal while sautéing.
3. I have used Vegetable oil here. Coconut Oil also goes well.
4. Adjust the spices as per your taste level.
5. Adding Potato along with this is another yummy way to cook beets.
6. If your hands get stained while grating beetroot, clean off with some lemon juice.
