Ingredients for Jeeraka Kanji:
Broken rice (unakkalari) – 1 cup
Fenugreek seeds – 1 tsp.
Turmeric Powder – 1 tsp. (divided)
Water – 5 cups
Ashali – 1 tsp.
Salt – as required
Grated coconut – ¾ cup
Cumin Seeds – 1 tbsp.
Shallots – 2, chopped, divided.
Ghee – 1 tbsp.
How to Make Jeeraka Kanji:
Wash the rice thoroughly. In a pressure cooker, add the washed rice, fenugreek seeds, turmeric powder, ashali, 5 cups of water, and salt. Close the cooker with its lid and cook on high flame for one whistle. Then reduce the flame to low and cook for two more whistles. Switch off the stove.
Meanwhile, in a mixer jar, add grated coconut and cumin seeds, and grind them into a smooth paste.
Once the pressure is fully released, open the cooker and add the ground paste. Mix well. Check the salt and adjust if needed. Cook again until the kanji starts to boil. Then remove it from the stove.
In a kadai, heat ghee and add chopped shallots. Sauté until the shallots turn golden brown. Add this seasoning to the Jeeraka Kanji. Mix well and close the lid for five minutes.
Open, give it a final mix, and serve warm.
