Today I am sharing a recipe which I learned from one of my North Indian friends who was there in Kinshasa. It’s Benda Sasam. This is a very quick, simple, healthy and easy recipe. This dish brings along a variety of textures and flavours with crispy okra in a delicious spiced yogurt sauce. I simply love having it with rice.

Raw Ladies finger or Okra is rich in vitamin C and vitamin K. It is also rich in dietary fibre, with contents of folate, magnesium and thiamine. It is valued for its edible green seed pods.

Servings: 4

Ingredients for Benda Sasam:

Ladies Finger / Bhindi – 10 (cut into thin slices).

For ground masala:

Grated Coconut – ½ cup
Green Chilli – 3
Mustard Seeds – ¼ tsp.
Thick Yogurt / Curd – ¼ cup
Salt – to taste.

For Seasoning:

Oil – 2 tbsp.
Mustard Seeds – ½ tsp.
Dry Red Chilli – 1
Cumin Seeds – ¼ tsp.
Curry Leaves – 1 sprig.

How to Make Benda Sasam:

Wash Okras and pat dry them completely using a cloth or paper towel. Then trim off its edges and chop it into small pieces (1.5- 2cm long). Keep aside. Grind coconut, green chilles, mustard seeds and yogurt to a fine paste. Add water to this it to the desired consistency. Take it out in a bowl. Keep aside.

Heat oil in a non-stick pan on low hat. Then add ladies finger / okra and give a good stir. Fry for 10 minutes or until very crispy and brown. Once the okras look done, add salt and turn off the heat. Keep aside.

Now prepare the seasoning / tadka by heating oil / ghee in a non-stick pan. Add in mustard seeds followed by cumin seeds / jeera, urad dal, when it starts spluttering add red chilli. Sauté it and add in curry leaves. Pour this tempering /tadka over the ground paste. Add in fried okra / bhindi at the time of serving. Now your Benda Sasam is done.

Serve it with rice and any curry of your choice.

My Recipe Notes on Benda Sasam:

1. Use fresh ladies finger.
2. Don’t add salt until bindi gets crispy and brown. Also don’t close it with a lid while frying. Otherwise okras become slimy.
3. Frying Ladies finger till crisp can be made well ahead of time and mixed at the time of serving, so that it stays crisp.
4. This curry should not be heated.
5. Adjust the seasoning as per your taste buds.

Happy Cooking.. Cheers.. Seena.
