Pulissery( Moru curry ) is a traditional Kerala dish made using yogurt, ground coconut and any vegetable of your choice. This is one of the popular dish of Kerala.

I have added yogurt and coconut based veg curries like Mambazha Pulissery, Beetroot Pachadi, Cucumber Pachadi, Bittergiard Pachadi, Moru Kchiyathu, potato stew and vegetable stew. We have some non veg curries like Chicken in Coconut sauce, chicken handi, egg stew, fish molee, Mutton Stew etc, chicken stew and beef stew.

Here goes the recipe of Brinjal Pulissery.

Servings: 5

Ingredients for Vazhuthananga Pulissery:

Brinjal / Purple coloured – 4
Green Chilli – 4, sliced
Ginger – 2
Garlic sliced – 4
Fenugreek Seeds – ½ tsp.
Chilli powder – ½ tsp
Turmeric Powder – ½ tsp.
Curry leaves – 1 sprig
Grated Coconut – ½ cup
Cumin Seeds – 1 tsp.
Yogurt / Curd (whisked) – 1 cup
Coconut Oil – 2 tbsp.
Mustard Seeds – 1 tsp.
Salt – to taste.

How to Make Brinjal Pulissery:

Wash Brinjal well. Cut it into halves or slice it. Put it in water. Keep aside. In a mixer bowl add the grated coconut and cumin seeds. Add little water and grind to a fine paste. Keep aside. Beet the Yogurt / Curd with a spoon lightly. Keep aside.

Heat Coconut Oil in a pan. Fry Brinjal on both sides. Transfer to a plate when it’s done. In the remaining oil, splutter Mustard Seeds followed by Fenugreek Seeds. Add Green Chillies, Ginger, Garlic and Curry Leaves. Saute them. Next add the Turmeric Powder and Chilli Powder and mix. At this point add the ground paste. Next add the fried Brinjal / Vazhuthananga. Mix it without breaking Brinjal. Next comes the turn of Yogurt. Add Yogurt and Salt. Mix it. Switch off the stove.
Now the Brinjal Pulisserry is done. Serve it with rice.

My Recipe Notes on Brinjal Kalan:

1. Care should be taken not to burn the brinjal while frying.
2. Do not heat yogurt for a longer time.
3. Add one red chilli while seasoning. I was not having it.. So couldn’t add it.
4. Adjust the spices as per your tolerance level.
