St. Valentine’s Day, which falls on Tuesday, February 14, is almost upon us. It’s a day when people show some extra 😉 love and affection towards their loved persons. It may be usually in the form of messages, cards, flowers, gifts, and the of course some red colored food, since red is the colour of love, the colour of blood, the colour of passion. This time I decided to go for a Valentine Vanilla Sponge Cake. Make this cake for your lover which tastes as lovely as it looks. Valentine’s Day was first associated with romantic love in high middle ages. In 18th Century England, it evolved into an occasion to express love by presenting the traditional gift, a bouquet of Red Roses, confectionaries, gifts etc. To know more about Valentine’s Day, click here.

It also says that, Valentine’s Day as a memorial of Valentine. It is a day that celebrates the love of St. Valentine for a woman whom he loved so much that he sacrificed his life for her. So people celebrate February 14th of every year as a day to show their love to their loved one, how much she/he means to them. It is a day reserved for lovers. It’s a day which we express our love to the people we love. But, I don’t believe Valentine’s Day is only for couples. I believe it’s for all the people who have their special person in their life to whom on that day they can express their love. It’s not necessary that someone need an opposite gender to be one’s valentine. The one who makes you happy would be the valentine for you, right?

Personally I think Valentine’s Day does not cover the reason of its origin. It should be a day to celebrate love even with friends and family. However, it has become a day to expect expensive outings and exchange gifts. Now it has become commercialised and a day that businesses make profits. It’s an occasion for the shop owners to amass profit..

This year Valentine’s Day falls on a Sunday, a holiday for all. So there is ample time to plan a lot in advance, how to celebrate it, with whom to spend time to express our joy, happiness and feelings. It’s an occasion when we remember our loved ones; the loved ones are getting emotionally driven on this day. We celebrate it in many ways. It is a day people celebrate with so much amusement and merriment in all countries around the world.

People celebrate almost all festivals whether it is religious or emotional. Valentine’s Day also known as the Saint Valentine’s Day is getting very popular these years. How do we celebrate Valentine’s Day? It is celebrated by going out with loved ones, spending time in some tourist spots, dining out etc., everybody has their own way of celebrating it.

What comes to your mind first when you think about Valentine’s Day? For me the ‘Red Colour’, the dress colour code of the valentines..

I think it’s time the tradition of Valentine’s Day be restored, a day to celebrate love with everyone we love around us. It’s obviously an unwelcoming day for the people who don’t have their loved ones or to remember something positively.

This cake takes little time to do, but it is absolutely worth the effort we put in. I am sure; you too will enjoy the mirror glaze pouring over the cake. (For this place a bigger plate than the size of the cake on your kitchen couter top. Place a wire rack over the plate. Then place the cake on top of the wire rack. Pour the mirror glaze over it. Now it’s done.

So let us go to the recipe of Vanilla Valentine Sponge Cake Recipe.

Ingredients for Making Valentine’s Day Cake:

Pls. have a look at the Sponge Cake or Pound Cake Recipe for getting ingredients to make Sponge Cake.
Sponge Cake – 1
Pineapple – 1 small tin
Pineapple essence – ½ tsp.
Syrup of Pineapple – 1 cup
Water – ½ cup
Whipped Cream – 1 ½ cups
Icing Sugar – 6 tbsp.
White Mirror Glaze Recipe:

Ingredients for White Mirror Glaze:

Granulated sugar – 1 ½ cup (300 grams)
Condensed milk – 65 grams (3 to 3 ½ tbsp.)
White chocolate – 100 grams
Gelatine (unflavoured) – 6 grams (just under 2 tsp.). Soak gelatine in 36 ml water (7 tsp.)
Water – 50 ml ( ¼ Cup)
White colour – ½ tsp.

How to Make Vanilla Valentines Day Sponge Cake:

How to Make Mirror Glaze:

Mix the gelatine with water. Keep it aside. Let it soak for 5 minutes. Take a medium sized pan and heat it on medium. Add in the sugar, water and the sweetened condensed milk. Stir it occasionally until the mixture begins to bubble. At this point, pour in the soaked gelatine. Stir it well until gelatine is fully dissolved. Turn off the heat and add in the white chocolate chips. Stir it slowly until all the white chocolate is melted. Sieve it into a large bowl. Stir it continuously to stop a skin from forming. Wait until the glaze reached room temperature. Add the white colour and mix it well again. Now your Mirror Glaze is done.

I have used the heart shaped cake tin to make this Valentine Sponge Cake rather than how I made the basic sponge cake in a rectangular loaf pan. Also I cut the cake into 3 layers. Then, mix the pineapple essence, sugar, pineapple syrup and water. Soak cake well with this syrup. Whip cream and Icing sugar till it forms soft peaks. Take a wooden cake board and apply little cream on it, so that the cake wouldn’t move from one place to the other or fall down while filling and decorating the Valentine Vanilla Sponge Cake.

Now take the cake layers and sprinkle sugar syrup in to the layers slowly and let the sugar syrup soak the cake properly. Sprinkle the syrup on all the three layers. Take the bottom layer which is soaked with the sugar syrup, cut side up on a cake plate. Spread generous layer of whipped cream all over the top of the layer and on the sides of the cake. Sprinkle pineapple pieces. Place the second layer and repeat the process. Place the third layer and spread cream generously all over the cake. Smoothen the top and sides of the cake with a serrated knife.

Once the glaze is cooled slightly, pour this glaze over the Sponge cake you made. With the same knife make some make diagonal lines on same direction and on equal distance spaced about ¼ inches apart, both on top and sides of the cake. Decorate the Vanilla Valentine Sponge Cake the way you want. I assembled it my way.. Take two piping bags and fill it with the red and yellow coloured glaze. I have used ready to use coloured piping gel like pink, red and yellow. Mix it well with a spoon, so that it would be little more pliable before piping on the cake. Cut out the edge of the piping bag slightly. Line the edge of the cake with red coloured piping gel.. Since it is meant for the Valentine Day, I drizzled some small drops of red glaze on top of the cake. Then I made some heart shapes with yellow mirror glaze. Sprinkle the Valentine Sponge Cake with some edible silver balls. Place the cake in your refrigerator for some time before slicing it. That’s all..

Now your Vanilla Valentine Sponge Cake is ready to be serves to your Valentine and your loved ones..

My Recipe Notes on Heart-Shaped Sponge Cake:

1. You can use whipping powder also to make the whipping cream. In that case, mix one cup of cold water and 200 grams of whipping cream powder and whisk it for 3 minutes using a beater. Make a thick cream out of it. Then refrigerate the cream for about 15 minutes.
2. Keep the cake in the refrigerator for 2 to 3 hours so that the glaze sets.
3. Make sure the aluminium foil / Parchment Paper is sealed securely. If it moves while you are working, that may mess up your cake designs.
4. Maintain a steady pressure when squeezing the whipped cream and coloured glaze.
