Everybody loves Noodles. I love it in any form. We can have Noodles as a side dish or main meal. Noodles are very easy to prepare, but its cooking methods and time vary depending on its variety.
Rice Noodles are made from Rice flour and water. Rice Noodles are available in fresh, frozen or dried, in various shapes and thickness in market. Rice Noodles are commonly used in the cuisines of East and Southeast Asia. We Keralites usually call our favorite Idiyappam (a type of rice noodle which is made of rice flour, salt and water, fill an Idiappam press and then press in to noodle form and steam) as Rice Noodles or Nool Appam!
Eat a sumptuous meal while having fun. You can have tasty food with fun and calories needed. ‘Noodles’ is the fun ‘N’ food choice.
Today I am presenting before you a Noodle dish which is very easy to prepare. Enjoy it.

Ingredients for Making Coconut Noodles:
Rice Noodles – 200 grams packet
Oil – 3 tbsp.
Mustard seed – 1 tsp.
Cumin seeds- 1 tbsp.
Garlic (finely chopped) – 1 tsp.
Green Chilly split – 3
Vegetables of your choice – (I used Carrot and Beans)
Beans – 5 or 6 (cut in to fine strips)
Carrot – 1 medium size (julienned)
Chick Peas split (not roasted) – 2 tbsp.
Turmeric powder – 1 tsp.
Lemon Juice – 3 tbsp. (or according to your taste)
Salt – as required
Pepper powder – 1 tsp.
Grated Coconut – for garnishing.
How to Make Indian Style Rice Noodles:
Soak Noodles in boiling water for 15 minutes or as per the packet instructions. Before soaking add little salt to this water so that the noodles absorb it well. Drain the noodles in a sieve and run cold water over it to prevent it from sticking to each other and it arrests further cooking. Leave it for a while in the sieve until the water has completely drained. Cut the vegetables and keep it aside.
Add oil in to a wok. When the oil is hot add mustard and cumin seeds. Add Chick peas and Green chilly. When it turns golden brown, add vegetables, beans and carrot. First add Beans as it needs more time to cook. When beans are partially cooked add carrot. When vegetables are done add turmeric powder. Add the cooked noodles, salt, pepper powder. Toss everything together.
Switch off the flame when noodles get coated with the vegetable and spices. Add Lemon juice and toss everything together once again. Garnish with grated coconut and serve it immediately.
My Recipe Notes on Veg Rice Noodles:
1. Have all the ingredients required ready before hand, so that you can work quickly.
2. Don’t over soak Rice Noodles. Strictly follow the package instruction.
3. Use clean water without any impurities. Noodles absorb water and if the water used is not clean, it will taint the finished flavor of noodles.
4. Check noodles throughout the cooking process as it’s very important. I checked mine with a fork pulling out one.
5. Cook throughout on medium heat.
6. Cooking time of noodles depends on its width. Thick noodles will take a bit longer time.
7. People sometimes sprinkle oil after draining the water or while cooking or soaking noodles in boiling water. I suggest not to do this procedure as oil coats on noodles and so the spices don’t get stick to noodles.
8. If you feel that your Noodles are over cooked or over soaked, spread it on a plate for drying them out.
