Easy Cucumber Salad / Easy Munchy Cucumber Salad / Microwave Salad Recipe.

Cucumbers contain Vitamin K, Potassium and magnesium which help the proper functioning of the cardiovascular system. It lowers down the blood pressure. If you take cucumbers daily it help to decrease blood sugar level and bad cholesterol. It is very low in calories and will not provide a complete source of nutrition.




Some cucumbers taste bitter though it is a healthy snack. Remove the cucumbers bitterness by thinly slicing off both ends and rubbing one piece against the cucumber.

Servings: 4 as a side.

Ingredients for Crunchy Cucumber Salad:

Cucumber – bite sized pieces – 100 grams
Onion – 1 sliced finely
Garlic – 2 – chopped fine
Green Chilly – 1 sliced finely
Vinegar – 1 tsp. or lemon juice
Oil -2 tsp.
Salt – ¼ tsp.

How to Make Cucumber Salad:

Heat oil with sliced onion and garlic in a microwave safe bowl for 2 minutes on medium high.
Add cucumber and toss well, microwave for 2 minutes.

Add green chillies, salt, garlic, vinegar. Mix well. Microwave for 1 minute covered on medium high.
Now the Cucumber Salad is ready.

1. Try to use fresh cucumber.
2. Some cucumbers taste bitter though it is a healthy snack. Remove the cucumbers bitterness by thinly slicing off both ends, dipping those ends in salt and rubbing one piece against the cucumber.
