Avocado Cucumber and Tomato Salad Recipe.

Looking for a great summer dish with a difference? Here the summer season started and I thought of making one salad to ease the scorching heat and something which suits the humid weather. We have used this as main course for dinner.

This refreshing salad is great as side dish or as a luncheon or as a dinner salad. So I was overwhelmed with happiness at the time of making this recipe.
The secret of any salad is its dressing. Here I have used minced garlic, lime juice, black pepper, cumin powder, olive oil and salt to season it. This simple vegetable garden salad consists of small pieces of Avocado, Cucumber and Tomato.

This salad is so delicious and healthy too. Salads are a good option to use as main course in dinner as it is so light and healthy one. It came out so tasty and I have decided to make it quite often.

This garden salad is very popular especially in summers. It has got a wonderful flavour particularly with the dressing. This recipe of the salad is a great way to have some raw vegetables; otherwise we never bother to have vegetables other than using it as cooked ones. We eat this pretty blend often. I used the handy vegetables which were there in the refrigerator and also used avocado, my favourite.

Ingredients for Avocado Cucumber Tomato Salad:

Avocado, cubed – 2 cups
Cucumber, cubed – 3 cups
Tomato, cubed – 2 cups
Red Onion, medium sized, finely chopped – 2
Garlic, minced – 2 tsp.
Cumin powder – 1 tsp.
Lemon Juice – 2 tbsp.
Vinegar – 1 tbsp.
Olive Oil – ¼ cup
Salt – to taste
Black Pepper Powder – ¼ tsp. (optional)
Coriander Leaves – for garnishing.

How to Make Avocado Cucumber Tomato salad:

Take Avocado, Cucumber and tomato and cut them in to bite sized pieces. Take Salt, cumin powder, black pepper powder and minced garlic in a big bowl and mix it well. Add lemon juice. Mix it with a spoon and add onion in to it. Gently stir to combine. Coat with Olive oil and vinegar. Give a nice mix. Add all veggies and gently toss all vegetables together with the dressing.

Garnish with coriander leaves and serve it immediately.

My Recipe Notes on Avocado Cucumber Tomato Salad:

1. Mixing onion with lemon juice and salt will reduce the strong sharp taste of Onions.
2. You can add dressing of your choice.
3. Add desired amount of dressing as per your taste buds.
4. Carrots and bell peppers too go well with this.
5. You can chill it or eat it as soon as it is prepared.
6. This can be used as an Appetizer salad too.
7. Check for seasoning and add more if needed.
