I went through the recipe requests in this week end and I found this recipe too in the box. So that made me finally click some pictures of this salad. I have made this salad plenty of times over the years, after the first trial few years back. Very recently only I thought of clicking some photos for my blog..
A yummy salad with Macroni and Potato to celebrate the weekends and get-togethers!! Wow, that’s a nice idea, isn’t it? This salad works great as an appetizer, dinner etc..
The good thing with this Macroni Potato Salad is that one doesn’t need to be a master in cooking or to be a chef to make this salad. Even kids can make this salad. It needs only minimal usage of ingredients. It is quite easy to make and simple too.
If you have boiled potatoes and macroni in your refrigerator, ooh, la la, this salad will be ready in minutes!! I know that there are plenty of people who boil these two items, Potato and pasta or Macroni and keep it in the refrigerator or freeze it for the urgent usage of it. It’s a big time saver too, though I haven’t yet tried these tips.
Everyone has their own version of making salads. But the two major ingredients remain the same here, Potato and Macroni. There is no set recipe for salads. Those who want this salad in the chilled form chill it 3 or 4 hours in advance before serving.
Dressing time: 2 minutes
Ingredients used for making Macroni Potato Salad:
4 Cups cooked Macroni
4 medium sized Potatoes (cooked and cubed)
1 small cubed Capsicum / Green Pepper
1 small Carrot julienned
1 cups Yogurt
½ cup Milk.
½ to ¾ cup of Mayonnaise
1 cup of light fresh sour Cream
3 TSP. crushed Garlic
3 tsp. crushed Black Pepper corns
3 tbsp. of granulated Sugar
Salt to taste.
How to Make Macroni Potato Salad:
Cook Marconi as per the packet instructions al dente and drain it into a colander. Rinse in cold water until cool. Keep it aside.
Take a big pot, place the cleaned and washed potatoes. Cover it with water and add sufficient salt. Bring it to boil on high heat. Reduce the heat to medium high and cook Potatoes until fork tender. It will take about 5 – 7 minutes. Drain in a colander and keep it aside. Once it is cool enough to handle, remove the skin. Cut it into ¾ inch cubes. Keep it aside.
Cut Capsicum into cubes and microwave it for a couple of minutes.
Take a big bowl and put in cooked potatoes, Macroni and Capsicum. Take another small bowl and put in mayonnaise, cream and whisk it. Add in the crushed garlic, crushed pepper corns and salt and sugar. Mix it well. Pour in this dressing over the potato, macroni and capsicum mix. Toss it to combine all the ingredients.
Transfer this salad to a serving dish, cover it and keep it in the refrigerator for 2 or 3 hours to chill it until ready to serve.
My Recipe Notes on Hawaiian Macroni Potato Salad:
1. If you are planning to make it for a gathering, just double or triple the ingredients.
2. You can throw in cubed hard boiled eggs, some cooked ham or bacon if desired.
3. You can double the dressing if you prefer it so.
4. The longer you chill the salad, the better the taste.
5. Adjust all the dressing ingredients to suit your taste buds.
6. Macroni would absorb the mayonnaise, so keeping this in mind add little extra mayonnaise.
