It has been long since I posted a non-veg dish or a chicken dish. Today I am sharing a super, tempting chicken recipe. It is one of the few recipes I clicked after starting my blog, Seenas Food Basket . You can see the difference in these pictures!
When I checked my Non-veg folder I found out this chicken recipe.. I forgot everything about this recipe shooting or the day I took these pictures etc. But I can say for sure that, it is a dish I cook most of the time.
I have only three final pictures and that too from the same angle itself!! From that itself, I can guess, it was done almost two years back! Anyway, I liked it, though I am having only three final pictures because of its wonderful colour, the texture of the gravy and the perfectly cooked chicken meat.
I have added Chicken Masala Powder which enhances the taste. It gives a super flavour and aroma too. Adding Chicken Masala Powder makes this dish flavourful and unique too. You can find Chicken Masala Powder in any Indian grocery shops.
Cooking Time: 45 minutes
Ingredients for Chicken in Coconut Gravy:
Chicken – 1 kg
Onion – 3, chopped
Tomato – 3, chopped
Grated Coconut – 1 cup
Green Chilli – 2
Homemade Ginger Garlic Paste – 1 ½ tbsp.
Fennel Seeds – 1 tbsp.
Bay Leaves – 2 small
Cardamom – 4
Cinnamon – 1″ piece
Cloves – 4
Black Pepper – ½ tsp.
Curry Powder – 2 tbsp.
Chilli Powder – 1 tbsp.
Turmeric Powder – 1 tsp.
Curry Leaves – 3 springs
Coconut Oil – 2 tbsp.
Salt- to taste
Water as needed
Coriander Leaves – for garnishing
How to Make Coconut Curried Chicken Recipe:
Clean and cut chicken into fairly big pieces. Make the Ginger and Garlic to a fine paste. Slice up your onions. Chop your tomatoes. Take coconut and fennel seeds in a mixer. Grind them to a very smooth paste. Keep it aside till use.
Heat oil in a pan. Add in those whole spices and crackle them. Add in the Homemade Ginger Garlic paste and sauté for a minute. Next add the chopped onions. Sauté till it gets translucent. Next is the turn of curry leaves. Mix it and add the chopped tomatoes. Along with that add little salt too. Mix well till those tomato pieces are soft. Add in the Turmeric Powder, Chilli Powder and Chicken Masala Powder. Sauté it till the raw smell of the spice powders disappear. Now add the Chicken pieces and toss well with the masala onion mix. Pour in the required water and mix well. Bring it to a boil. Cover and simmer the chicken for about 15 minutes. Uncover the pan and add in the ground coconut paste. Mix well and check the salt. Add salt if it is required. Simmer it for 5 to 10 minutes. Remove from the stove when the oil starts floating on the top. Mix well.
Now the Chicken in Coconut gravy is ready to be served. Garnish it with Coriander Leaves. Serve it with Roti, Paratha or rice.
My Recipe notes on Chicken in Coconut Milk:
1. To avoid odor of chicken wash it with few drops of Vinegar or lemon juice.
2. You can make this dish by using boneless, skinless chicken or chicken thighs.
3. I always use garlic more than usually required in curries because of its medicinal value. You can reduce it as per your taste.
4. Instead of adding whole spices, you can use Homemade Garam Masala Powder.
5. If you want you can use marinated chicken ( mix chicken pieces with some salt, turmeric powder, lemon juice, and chilli powder) and keep it aside minimum for 20 minutes.
6. Sauté chicken well to get rid of the raw smell and until it releases some water.
7. Adjust the spices as per your taste.
8. Indian cooking is all about adding the right ingredients at the right time and cooking in to right consistency. The consistency of the dish should not be too thick or nor too thin.
