The Christmas season is here once again!!!

Hardly four more weeks to go for the Christmas 2018 and what’s more than an apt Stew recipe to post? Here I am posting Kerala’s aromatic Beef Stew today, which goes well with Kerala Palappam, Kerala Vellayappam and Homemade Bread. This is my sixth Stew recipe in the blog, Food Basket. The other five stews are Chicken Stew, Fish Stew, Egg StewVegetable Stew and Potato Stew. At least one among these we usually make for Christmas and Easter as side dishes for Bread, Palappam and Vellayappam the great breakfast dishes of Kerala.

The following are the most popular of all South Indian Christian dishes, especially from the tropical state of Kerala in India. The menu of Kerala Christians usually goes like this on a Christmas day. There are a large number of Christmas Recipes both Veg. and Non Veg. in this blog, Food Basket.

Kerala Christians need few quintessential Breakfast items like Palappam or Appam, Vellayappam or Kallappam, Kerala Style Idiyappam, Kerala Vattayappam, Homemade Bread and Stews on Christmas and Easter days. Also the unavoidable aromatic Christmas Fruit Cake or Plum Cake and any one wine, especially Homemade Grape Wine. The other wines you can make for a change for this Christmas are Rice Wine and Rose Apple Wine.

 
 

Associate a plate of aromatic, scrumptious and stunningly delicious Chicken Biriyani or Fish, Egg or Mutton Biriyani for lunch.. I have yet to post egg, fish and mutton biriyanis to Food Basket, though everything is ready and just editing is the one and only job left.. Hey, it’s a time consuming job.. 

We can’t imagine a satisfactory meal devoid of the grain ‘rice’. Cooked rice is a staple food to most people living in India. It can range from the simple and easy Ghee Rice / Ney Choru and Coconut Milk Rice to any Biriyanies. Ghee rice is simple and easy to make. It is the one you can totally depend on when you are busy. Though Biriyani is little time consuming dish, it’s totally worth the effort and time you put in. The vegetarian can have Vegetable Pulao.



The above said heavy meal can be followed by any Snacks items and Tea in the evening. There are various snacks you can choose by Clicking Here… Dinner is left and there would be sufficient leftovers from the day’s meal. You can simply have Dinner Rolls and the leftover Beef Stew…

Let us come back to Beef Stew.  Here goes the recipe…

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Servings: 4
Calories: 175 / 1 cup

Ingredients for Beef Stew with Coconut Milk:

Beef – 265 grams
Potato – 2, cubed
Green Chilli – 5, slit
Onion – 2 medium, sliced
Ginger – 1 ” piece, julienned
Carrot – ½ cup, cubed (optional)
Green Peas – ½ cup, I have used frozen (optional)
First extracted Coconut Milk – 1 cup
Second extracted Coconut Milk – 2 ½ cups.
Cinnamon – 1 ” piece
Cloves – 3
Green Cardamom – 3
Black Pepper Corns – 1 tsp.
Vinegar – 1 tbsp.
Coconut Oil – 2 tbsp.
Curry Leaves – 2 sprigs
Coriander Leaves – for garnishing
Corn Flour – 1 tsp. (optional)
Salt – to taste



How to Make Beef Stew:

Cut, wash and clean and drain Beef. Keep it aside.

Heat 1 tbsp. Coconut Oil in a pressure cooker and add Beef. Sauté it for about a couple of minutes. Then add the chopped Carrot followed by Potato, Green Peas and the Thin Coconut Milk (see my recipe notes). Add Salt and Vinegar at this stage and mix well. Close the pressure cooker and cook on medium heat till the first whistle and then reduce the heat and cook for another 15 to 20 minutes. Remove it from heat and let it rest till the pressure is completely released on its own. Open the cooker and check whether Beef is cooked well.

Next heat a pan with 1 tbsp. Coconut Oil and add the whole spices like Cinnamon, Cardamom, Cloves and Black Pepper. Sauté it till these spices release aroma. Add the julienned Ginger and sauté again. Next add the sliced Onion and saute it till onion becomes soft and translucent. Add Curry Leaves and slit Green Chillies. Check the salt and if needed add little at this age and mix well.

Once you are sure that everything is completely cooked, add the Thick Coconut Milk. Mix well and simmer it again for two minutes or until you get the right consistency of the stew. Mix a tablespoon of Corn-starch with 2 tbsp. of water. Add this into Beef Stew while its boiling to get it thicken. But, it`s highly optional.

Garnish this stew with Coriander Leaves. Beef Stew is traditionally served with Appam, Vellayappam, Idiyappam, Bread, or with some toasted bread.

My Recipe Notes on Kerala Beef Stew:

1. Leave some fat content in beef as it gives a wonderful taste to the dish.
2. Use fresh and white potatoes for making this stew, as they can be creamy and flavourful. Red ones don’t absorb the stew well.
3. Adding carrots and green peas is your choice.
4. You can use Tomatoes as a substitute to Vinegar.
5. If you want, you can add ½ tsp. Fennel Seeds or its powder.
6. You should not cook Onion too much as it is always good to enjoy the crunchy onions.
7. Adding coconut oil gives an authentic taste to the dish.
8. This Stew gets its’ spiciness from Black Pepper and Green chillies. You can use either both or only one as per your choice.
9. I have used frozen green peas. If you are using dried green peas, soak in water minimum for 6 hours and pressure cook it until it is done.
10. The coconut milk should not get curdled.
Using coconut milk enhances the flavour and taste. You can use fresh coconut or store bought coconut powder to make coconut milk. I have used canned coconut milk, for getting second coconut milk, I have diluted tinned coconut milk by adding 1 ½ cups of water to ½ cup of tinned coconut milk.

Homemade Coconut Milk
– For getting the first thick coconut milk, add 1 cup shredded coconut with 1 cup water and blend it well for about one minute. Filter it and your thick coconut milk is ready. Use the strained coconut and 1 cup of water and blend for another one minute. Now extract the thin coconut milk.

It totally depends on how rich or mild you want this curry to be. If you want a rich stew, increase the amount of first extract of coconut milk.

If using coconut milk powder, mix 1 tbsp. of powder with ½ cup milk.

11. Substitute Vegetables for the vegetarians. Those who don`t eat beef, can replace it with chicken and follow the same procedure.
12. If you are going to use it the next day, refrigerate it, the next day bring it to room temperature, and reheat every serving in the microwave or a slow cooker set on low medium heat.
