Today I am presenting a simple, quick and tasty time pass snack or evening snack, Spicy Roasted Peanuts. Peanuts or Kappalandi as we say in Malayalam, is lovable both by vegetarians and non-vegetarians alike.. Here, in Kinshasa they call it arachide, it’s French name.
All of us eat peanuts in variety of ways, either roasted, boiled, deep fried, buttered or in roasted form. It has got immense health benefits. Peanuts are a good source of Vitamin E, Protein and Fiber content. We often throw away its papery skin. But pls. don’t discard it, as it is a fountain of nutrients. So today onwards include peanuts in your diet, roasted, boiled, deep fried or shallow fried.. These tiny stars bring us a plenty of health benefits.
In India, it’s available all over the place, markets, bakeries, streets etc. We use to grab few packets when we get to see this in shops or bakeries. Once I made it by myself only realised how easy it is and now stopped buying expensive roasted peanuts from shops. My loving brother Siby is a big fan of Kerala Mixture / Chivda, the most favourite crispy snack of India. It is a combination of peanuts, seva, boondhi and spices. If I get the packet first, I used to grab those peanuts before giving it to my brother in our childhood!! Wherever we go, no other mixture from different parts of India can compete with the look, colour, beauty and texture of Kerala Mixture! So Kerala mixture is the queen of all mixtures. This is one of the ‘must take’ items for NRIs in their suitcases once they leave to their workplace.
Peanut roast is a perfect time pass snack. In schooldays, we used to wait for the sound of ‘tang, tang’, which the Kappalandi wala used to make by hitting on his frying pan with an iron rod. Peanut, peanut, peanut for sale.. kappalandi, it continues even today when we hear the same sound. Sometimes they fry these peanuts mixing with sand in an iron cast skillet, that’s another variation. The smell of frying peanuts is unbelievably tantalizing!! Those venders retail these hot and salted peanuts in small paper pockets. On our last visit we got it for Rs. 10/- Even that sound is so addictive. You need to put special effort to stop eating it every time you start it.
With very simple and easily accessible ingredients in your kitchen, you can make these delicious and tasty evening munchies. You can either peel the skin off or can eat as it is..
With one or two table spoons of oil, you can fry these peanuts just the way of deep frying it. The advantage of making it in this way is no need of in taking excess oil. The important thing you should keep in mind here is to keep the flame always on medium and stir it continuously. Frying it on high flame makes the outer layer of peanuts cook and not cooked its inside. When it is almost cooked, the colour of peanuts will change and you will get the crackling sound of these peanuts.
This is an ideal snack for the bachelors also. When you come from office in the evening, you can make this peanut fry easily and quickly. It is tasty and healthy too. It will take 3 to 4 minutes to roast or for getting that crackling sound. Add the spices only after switching off the flame, otherwise the spices will get burned.

Ingredients for Spicy Salted Roasted Peanuts Recipe:
Skinned Raw Peanuts – 200 grams
Garlic cloves – 2
Oil – 1 tbsp.
Chilli Powder – ½ to 1 tsp.
Curry Leaves – 1 sprig
Salt – to taste
How to Make Nilakadalai Varuval:
Crush the garlic and keep aside. Make sure that peanuts are cleaned.
Keep a kadai / pan on the stove on high flame. When the pan is hot enough, reduce the flame to medium and add the raw peanuts. Stir it until you start hearing the crackling sound. Pour in 1 tbsp. oil and mix for few seconds. Now add the required salt and mix. Switch off the stove. Add chilli powder. Keep mixing until chilli powder is coated well on all peanuts. When it dries, the oil sucks back.
Serve it with a cup of hot tea. Store in a tightly covered container at room temperature.
1. Make sure that peanuts are fresh and cleaned.
2. The time of roasting peanuts will vary depends on which type of peanuts you are using.
3. Make sure your pan is very hot before adding peanuts. Once you start frying peanuts, reduce the heat to medium. Don’t walk away as the peanuts will easily get burned.
4. If you want to roast peanuts in big volume, do it in batches.
5. You can add little chaat masala to get little extra flavour.
6. Adjust the chilli powder as per your tolerance level.
7. The peanuts will continue cooking after you switch off the stove. The skillet and the peanuts themselves will be extremely hot. So keep it on a place which is safer where it can cool. Stove top is the best place.
