Today, I’m excited to share a simple, quick, and delicious snack idea perfect for a break or evening: Spicy Roasted Peanuts. Peanuts, also known as ‘kappalandi’ in Malayalam, are a popular snack among both vegetarians and non-vegetarians. Interestingly, in Kinshasa, they’re referred to as ‘arachide’, which is the French term for peanuts.

Peanuts are a versatile snack that can be enjoyed in various ways – roasted, boiled, deep-fried, buttered, or shallow-fried. Not only are they delicious, but they also pack a nutritional punch. Rich in vitamin E, protein, and fiber, peanuts are a healthy addition to any diet. And don’t throw away the papery skin! It’s a treasure trove of nutrients. From now on, make peanuts a part of your diet and reap their numerous health benefits. These tiny nuts truly are nutritional powerhouses.

Roasted peanuts are a ubiquitous snack in India, easily found in markets, bakeries, and street stalls. I used to buy them by the packet, but after trying my hand at making them at home, I realized how simple it is. Now, I’ve switched to making my own and saving on the extra cost. My brother Siby, on the other hand, is a huge fan of Kerala Mixture, also known as Chivda – a popular crispy snack made with peanuts, sev, boondi, and spices. As kids, I would often sneak the peanuts out of the packet before handing it over to him! Kerala Mixture stands out from other regional variations, boasting an unbeatable combination of texture, color, and flavor. It’s no wonder it’s a favorite among Non-Resident Indians (NRIs) who often carry it with them as a nostalgic treat.

The sound of ‘tang, tang’ from the peanut vendor’s iron pan is unmistakable, and it instantly brings back memories of school days. The vendor’s chant of ‘peanut, peanut, peanut for sale’ is music to our ears. Some vendors even roast peanuts mixed with sand in an iron skillet, adding a unique twist. The aroma of roasting peanuts is irresistible, and the hot, salted peanuts sold in small paper packets are a treat. Even at just ₹10, it’s a snack that’s hard to resist. The best part? It’s almost impossible to stop at just one handful!

Satisfy your evening cravings with a simple and delicious snack made with readily available ingredients from your kitchen! Roasted peanuts are a perfect option, and the best part is you can enjoy them with or without their skin.

To make perfectly roasted peanuts with minimal oil, heat 1-2 tablespoons of oil in a pan over medium flame. Stir the peanuts continuously to ensure even roasting. Avoid high heat, as it can cause the outer layer to burn before the inside is fully cooked. As the peanuts near doneness, they’ll change color and start crackling. This method allows you to enjoy crispy, flavorful peanuts without excess oil.

This peanut fry is a perfect snack for bachelors who want a quick, easy, and healthy option after a long day at the office. Simply roast the peanuts in a pan for 3-4 minutes, or until you hear the crackling sound. To add extra flavor, sprinkle spices over the peanuts after switching off the flame, as adding them earlier can cause burning.

Ingredients for Spicy Salted Roasted Peanuts Recipe:

Skinned Raw Peanuts – 200 grams
Garlic cloves – 2
Oil – 1 tbsp.
Chilli Powder – ½ to 1 tsp.
Curry Leaves – 1 sprig
Salt – to taste

How to Make Nilakadalai Varuval:

Crush the garlic and keep aside. Make sure that peanuts are cleaned.

Keep a kadai / pan on the stove on high flame. When the pan is hot enough, reduce the flame to medium and add the raw peanuts. Stir it until you start hearing the crackling sound. Pour in 1 tbsp. oil and mix for few seconds. Now add the required salt and mix. Switch off the stove. Add chilli powder. Keep mixing until chilli powder is coated well on all peanuts. When it dries, the oil sucks back.

Serve it with a cup of hot tea. Store in a tightly covered container at room temperature.

1. Make sure that peanuts are fresh and cleaned.
2. The time of roasting peanuts will vary depends on which type of peanuts you are using.
3. Make sure your pan is very hot before adding peanuts. Once you start frying peanuts, reduce the heat to medium. Don’t walk away as the peanuts will easily get burned.
4. If you want to roast peanuts in big volume, do it in batches.
5. You can add little chaat masala to get little extra flavour.
6. Adjust the chilli powder as per your tolerance level.
7. The peanuts will continue cooking after you switch off the stove. The skillet and the peanuts themselves will be extremely hot. So keep it on a place which is safer where it can cool. Stove top is the best place.

Happy Roasting..

Cheers & Bon Appétit
