Today’s recipe is Sausage and Vegetable Stir Fry. I used Carrot and Bell Pepper to this. One can have this for breakfast, brunch, appetizer or as an addition to dinner..

If you are planning to host a party, I am sure that this dish will disappear in minutes, so you have to make lot and lot.. You can find different versions of sausage as starters in all kinds of get together, small or big.

This is so easy to make which is a family favourite to most of us. Once in a while I buy sausages and keep it in the refrigerator for emergency usage.

Sausage contains iron which is an essential mineral in our body to produce haemoglobin. They provide vitamin B-12, a nutrient important for healthy red blood cells.

Serves – 2

Ingredients for Sausage and Vegetable Stir Fry:

Chicken Sausage – 1 pack
Bell Pepper – medium sized – 3 (seeded and cut in 1” thick strips.
Carrot – 2 no
Onion (big) – 1 no (cut in squares)
Olive Oil – 2 tbsp.
Garlic cloves (minced) – 3 no
Cumin seeds – 1 tsp.
Oregano Herb – 1 tbsp.
Pepper Powder (freshly ground) – 1 tsp.
Turmeric Powder – ½ tsp.
Salt – to taste.

How to Make Chicken Sausage Stir Fry:

In a pan add 1 tbsp. Olive oil and sauté followed by Carrot and Onion. Add salt and mix well. Transfer this to a plate.

In the same pan add the other 1 tbsp. of Olive oil. Add minced garlic and sauté it till it changes its colour. Now add turmeric powder and mix it well. Next add sausage and sauté it till it gets the golden colour. Add salt and pepper powder to this and m ix well.

Now add the roasted vegetable mix and sauté it very well. Let the whole thing simmer for 10-15 minutes. Taste and season it if required.

My Recipe Notes on Sausage Stir Fry:

1. You can use yellow and Red Bell peppers too which gives the dish and appealing colour and taste.
2. Cook this in medium heat till the end.
