Chicken Liver is my favourite item in whatever form it is. I grab the pieces in the curry. My husband is not a fan of this, so he gives the pieces to me if he gets it. It is simple and easy to make, yummy and delicious to taste. It prepares with simple ingredients. You will love the rich coat of flavourful Masala.

Liver is a rich source of iron and improves the hemoglobin levels in the blood. It improves the iron level in blood.

Servings: 5

Ingredients for Chicken Liver Masala:

Chicken Liver – 250 grams
Onion – 1 medium, thinly sliced
Tomato – 1 medium, chopped finely
Homemade Ginger Garlic Paste – 1 tbsp.
Fennel Seeds –1 tsp.
Turmeric Powder – ½ tsp.
Chilli Powder – 1 tsp.
Black Pepper Powder – 1 tsp.
Coriander Powder – 2 tsp.
Homemade Garam Masala Powder – 1 tsp.
Oil – 2 tbsp.
Salt – to taste.

How to Make Chicken Liver Masala:

Heat Oil in a pan. Add in fennel seeds and let them sizzle. Add in sliced onion and sauté for few minutes or till onion turns translucent. Next add in Ginger Garlic Paste and sauté well. Now add the spice powders except black pepper powder and mix well. Add in the sliced tomatoes and salt. Sauté them till they turn slightly mushy or till oil starts separating.

Add in the chicken liver and toss well in the masala. Now add the Black Pepper powder and mix well. Cover the pan and let it cook for 15 to 20 minutes or till the chicken liver is cooked well and the water is evaporated well. Mix again so that the flavours get coated well with the chicken liver.

Chicken Liver Masala is now ready for serving. Serve it with rice, roti etc.

My recipe Notes on Chicken Liver Masala:

1. Use Non-Stick pan preferably for cooking this.
2. Caramelisation of onion gives it a natural sweetness and it mitigates the heat from the black pepper.
3. Adjust the water measure if you prefer more gravy.
4. Use homemade garam masala powder for better taste.
5. Adjust the spices according to your tolerance level.
6. Do not overcook the liver or it will be hard and rubberish.
7. Garnish with coriander leaves. (I didn’t as I was not having the fresh ones.
8. At the finishing stage take care to prevent it from burning.
9. Always make sure to get fresh Chicken liver and wash in turmeric water.
