Many variations are there for this recipe depends on the region and style. Let us learn how to make a simple and tasty Kerala Style Upma. In Malayalam, people call it ‘Salt Mango Tree’. Hehe, It’s Uppu (salt) and Mavu (Mango Tree).. so funny right..
Upma is a nutritious breakfast dish to substitute our daily toasts or cornflakes.

Before making this recipe, make sure to dry roast Rava for few minutes or till a nice aroma comes. Long back when ready made roasted packets are not available, we used to dry roast it taking enough time. These days ready made packets of roasted rava are available in markets, but still do dry roast it again for a couple of minutes. Do the same for whichever brand you buy.

Upma is very easy to prepare. We make many varieties of upma, some people make very wet version upma and some make a dry version upma. Another variation is adding more veggies like Frozen Green Peas, French Beans etc. As I was having fresh Carrots with me at that time, I thought to add few pieces. So it’s not fully a Veg Upma or an ordinary Upma. I use to make both, wet and dry versions depends on the mood. hehe.. But preferably both me and my husband like the wet version. But here I am presenting the dry version Upma. The wet version Upma I will add later. If you want wet upma, just add more water that the amount of water given in the ingredient section. For getting the dry version, just add the mentioned amount of water.

Here goes the recipe of Rava Upma..

Serves: 3

Ingredients for South Indian Rava Upma:

Rava / Semolina / Sooji – 1 cup
Coconut Oil – 2 tbsp.
Mustard Seeds – 1 tsp.
Dry Red Chilly – 1
Peanuts – 1 ½ tbsp.. (optionsl)
Split Chana Dal – 1 tbsp.
Split Black gram Urad Dal / Uzhunnu Parippu – 1 tbsp.
Big Onion – 1, chopped
Tomato – 1 big ( optional)
Ginger chopped – 1 ” piece
Green hilli, chopped – 2
Curry Leaves – 2 sprigs
Water – 1 ¾ cups
Ghee – 1 tbsp. (optional)
Grated Coconut – 2 tbsp. for garnishing.
Cashew nuts – for garnishing.
Coriander Leaves – a fistful (for garnishing)

How to Make South Indian Upma:

Dry roast Rava on medium flame till nice aroma comes. When the rava is perfectly roasted, remove it from fire and keep aside in a bowl. Keep boiled water on low flame in a pan on the stove.

Heat 2 tbsp. Coconut Oil in a pan. Add Mustard Seeds. When the mustards start spluttering, add the Dry Red Chilly, Chana Dal and Urad Dal. When the seasoning turns light brown, add the chopped Savala / Big Onion. When the Onion turns translucent, add the Salt. Add the chopped Tomato and mix it. Next add the Curry Leaves and mix. Add the boiling Water to this. Let the mix boil on high flame. Do salt check and add more if required. Add Ghee at this time and mix.

Reduce the flame to low and slowly add the Roasted Rava. Keep stirring till you see the rava is mixed well with water. Close the pan with its lid and cook on low flame for a couple of minutes. Switch off the flame and remove it from the stove. Keep it aside for five minutes with lid on. The upma will cook properly with the steam inside the pan. Open the lid and mix well with spatula. Check the doneness of upma. If it is not done, close the pan once again and keep aside for five more minutes. Run a fork through the upma to separate the chunks.

The soft and fluffy Upma is ready. Garnish with Cashews and Coriander Leaves. Serve hot with Banana and Sugar.

My Recipe Notes on Kerala Upma:

1. If you are going to use readymade packet roasted rava, still you have to dry roast it till you get a nice aroma.
2. If you like Vegetable Oil, you can replace Coconut Oil with it.
3. Do not add cold water / normal water while making Upma, or else, the upma will have water like taste.
4. You can add grated coconut after sautéing onion. My mom use to add grated coconut. I too sometimes add it. But it’s optional.
5. Adjust the green chilli and ginger according to your taste.
6. If you want add 2 tbsp. milk powder when the water is boiling.
7. Towards the end, you can sprinkle little Sugar on top.
