Vegetable Bread Sandwich / Toasted Cheese Vegetable Bread Sandwich.
It’s an easy to go item for breakfast and dinner or as a snack, if you prefer to have a light dinner. You can pack this in your kids lunch or snack box and also its really a good dish for taking it for outings and picnic. We can see street vendors selling this vegetable bread sandwich in cities. It’s a very common street food in Mumbai.
It’s a very easy and simple bread sandwich that you can make fast with the available ingredients in your pantry. It is a proper restaurant style toasted sandwich stuffed with vegetables and Cheese. Cheese helps here to bind vegetables together, so that veggies won’t sneak out from the sandwich.
Everyone have their own version of making bread sandwiches and sandwich filling as per their taste buds.. This is how I make it usually. Here goes the Recipe of Vegetable Bread Sandwich.
Ingredients required for making Vegetable Bread Sandwich:
6 pieces of Bread, white or wheat
2 tbsp. salted Butter / Ghee
2 tbsp. Green Chutney
¼ cup grated Carrot
½ cup sliced Cabbage
1 medium sized roughly chopped or diced Tomato
¼ cup of roughly chopped or diced Cucumber
2 Lettuce leaves
½ cup sliced Cabbage
¼ cup grated Carrot
1 small Onion, finely sliced.
½ tsp. Toasted Cumin Powder to taste
½ tsp. White Pepper Powder to taste
2 slices of Cheese
Salt to taste
Handful of chopped coriander leaves.
How I made Vegetable Bread Sandwich:
Take all the vegetables that you are going to include in your bread sandwich. Slice all vegetables in to desired shapes. Grate the carrot. Cut the onion in to thin slices. Dice tomato and cucumber into small chunks. Cut the cabbage. Cut the lettuce leaves in to small pieces.
Take Bread Slices and apply butter on one side of bread evenly. Then spread the green chutney on top of butter. Take the other bread piece and do the same and keep it aside. Place all the vegies and the lettuce leaves you have arranged on one piece of bread. Sprinkle one or two pinches of cumin powder and black pepper over veggies as you added. Place a slice of Mozzarella cheese on the top of it. Cover it with the other slice of the bread in which you have already spread butter and tomato ketchup. Press both bread pieces slightly to seal all the veggies you kept inside.
Grease your sandwich maker / Toaster with little butter / ghee. Take one sandwich and apply little butter on one side and place that part down inside the toaster. Spread little butter on the upper side too. Close the toaster.
Toast the sandwich as in the instructions given in the sandwich maker or for about three or four minutes or until the bread becomes crisp.
Garish your vegetable bread sandwiches with carrots, shredded cabbage or other veggies you prefer. Serve your toasted cheese vegetable bread sandwich with green chutney, ketch up and warm with milk / tea / coffee / juice etc.,
My Recipe Notes on Vegetable Bread Sandwich:
1. You can use vegetables of your choice.
2. If you don’t have the Sandwich maker you can toast it on a frying pan top. But make sure that veggies don’t fall down.
3. Veggies get only half cooked in the sandwich maker. Having raw veggies or half cooked veggies is always good for your health. If you prefer it to be cooked fully, grate veggies or slice it in to very small pieces.
4. You can use any other cheese of your choice.
5. You can use 2 tbsp. Tomato Ketchup to spread on the bread. That’s completely optional.
6. Once you placed the bread inside the toaster and started cooking, keep checking it after a minute or so. If it’s not toasted evenly toast it for one more minute.
