What Indians accredited to Pav (as in Pav Bhaji) is presumably the dinner rolls to the western world. Pav in Marathi means bread. This can be served as an appetizer, breakfast or as dinner. These Pav Buns are accompanying with a bhaji known very well as Pav Bhaji, a classic Indian Street Food.. Bhaji is spicy and tangy, also a thick potato based vegetable mash which goes well with these Pav Buns. Pav Bhaji is a street food which consists of ingredients like, onion, potato, coriander leaves, lemon, etc.. It’s getting popular day by day and is loved by all irrespective of class!!
I had this street food for the first time when I visited Borivli, a suburban area located in the north-west section of Mumbai, Maharashtra, India. We stayed in a Franciscan Ashram, St. Francis Monastery’s guest house with my family for one week. Before leaving that place, I remember we had it twice or thrice from the same place.. Yes, we started loving it. That love has not ceased till now.
I am planning to make all those street foods in my kitchen sooner or later. I got a chance to try Pav Bun by myself at least now. I will add the recipe of Pav Bhaji later.
I am sure that this Pav Buns will draw everybody’s attention and all of you would give it a try.

Ingredients for Pav Buns:
All purpose flour – 3 cups
Warm Water – ¼ cup
Active Dry Yeast – 1 packet ( 7 grams)
Warm Milk – 1 ¼ cups
Unsalted Butter (melted) – 2 tbsp.
Beaten Egg – 1
Sugar – 2 tbsp.
Salt – ½ tsp.
Vegetable oil – ½ tsp.
Milk – for brushing.
How to Make Pav Buns:
Dissolve 1 packet of dry yeast (that’s 2 ¼ tsp. dry yeast to warm water). Add beaten egg, sugar, salt and 1 cup of flour to yeast mixture.
In another bowl, warm the milk and 3 tbsp. of butter in microwave for a minute .Let it rest to get it cool. Add milk butter mix into yeast mixture and mix well. Add the second cup of flour and mix well.Add the third cup of flour and that will form wet, sticky dough. On a floured board, knead that until you have smooth and elastic dough, but still soft and slightly sticky dough. Don’t add too much flour into the dough.
Next step is the transferring of the dough to a well-oiled bowl. For this, take a bowl and oiled it with ½ tsp. vegetable oil. Transfer the dough to this bowl. Coat it with oil so it doesn’t dry out. Cover with a towel and let it rise in a warm spot, until it gets double in size. After it doubles, put it on a lightly floured cutting board, and pat it down with your hands. Form it into a round or square shapes as you like. Then take a knife and cut it into equal pieces. Roll it into a shape as you like. Let the Rolls rise again double in size. Brush the pav buns with milk.
Bake rolls at 350 degrees F. for 20-25 minutes, until the top becomes golden brown. Remove from oven and spread melted butter all over the rolls to keep it soft. Your Pav Buns are now ready to be served with the delicious combo of Pav Bhaji Masala.
1. If you are using active dry yeast, wait for 10 minutes or until the mixture is frothy. No need to wait if it’s instant yeast.
2. f you are using Instant yeast, use 1 ½ tsp.
3. It is highly necessary to add the active dry yeast to the warm water, but not hot water which will kill the yeast.
4. If flour is sticking to the sides of your bowl while mixing it with a wooden spoon, the dough is not yet ready to knead. Stir it again well till all the inputs are well combined.
5. Kneading the dough well is another key to get a soft bun.
6. If the dough is too sticky, sprinkle more flour and then knead it.
7. Don’t tear the dough, instead just stretch it.
8. Pre heat the oven for two minutes and then switch it off when you keep the dough for resting which gives a warm atmosphere in the oven.
9. Place a small bowl with cold water during pre-heating the oven. It gives a steamy atmosphere in the oven and it prevents cracking the pav buns.
10. You can use water instead of milk and margarine instead of butter!!
