Coconut Milk Rice is a very easy to make rice dish and can be made with some common ingredients that are available in our pantry. Coconut Milk is the base of this dish and we use basmati rice for making this rice dish. Usually it is served with non-veg curries.

Coconut Milk Rice is cooked with some variations in different countries and also in different parts of South East Asia. It is known by different names in different places, like Nasi lemek in Malasia, Khao Lam in Thailand, Kiri Bath in Sri Lanka, Arroz con coco in Latin America, Arroz con dulce in Puerto Rico.. Rice and coconut milk are the basic ingredients of all these dishes in these places.

Coconut is one of the main ingredients used in all these recipes. Indian spices cooked in coconut milk gives a unique taste to this dish.

Serves: 4

Ingredients for Coconut Milk Rice:

Basmati Rice – 2 cups
Thick Coconut Milk – 2 cups
Boiled water – 1 ½ cups
Onion (savala), cut it lengthwise – 2
Homemade Ginger Garlic Paste – 1 ½ tbsp.
Green Chilly (slit) – 4 nrs.
Cardamom – 3 nr
Cinnamon – 1″ piece
Cloves – 4
Bay Leaf – 1
Feenel seeds / perum jeerakam – ½ tsp.
Ghee or Vegetable Oil – 3 tbsp.
Salt – to taste
Potatoes, thinly sliced and fried – for garnishing
Coriander Leaves – for garnishing.

How to Make Coconut Milk Rice:

Rinse rice with cold water until water runs clear. Soak this rice for 15 minutes and drain out water completely.

Heat oil or ghee in a pan. Add all the spices Cardamom, Cinnamon, Cloves, Bay Leaf, Feenel seeds / perum jeerakam in order and sauté it till they turn fragrant. Add ginger garlic paste and fry for half a minute. Add green chillies and fry for another ½ minute. Add onion and sauté it till the onion turns translucent.

Add the rice and sauté it just for one minute till the rice is so hot to touch. Pour coconut milk and water and add salt. Stir well. Let it come to boil. Reduce the heat and leave the rice to simmer for about 10 minutes or cook till the rice is done.

Garnish it with fried onions, potatoes and coriander leaves. Serve hot with one veg or non veg side dish, papad and raitha. I am sure you all will love this. Enjoy and be amazed!!

My Recipe Notes on Coconut Rice:

1. You can add vegetables like green peas, carrot or cauliflower as an optional.
2. I have used readymade coconut milk.
3. For homemade coconut milk, take 4 cups of luke warm water and 2 cups of grated coconut, blend on high in a mixer, pour through a colander and then squeeze it through a cheese cloth.
4. Use fresh ginger garlic paste to get the real aroma to this dish.
5. If the rice is not done fully, sprinkle few drops of water and cover it and cook till the water is completely absorbed. (I usually cook rice by absorption method).
6. Fried cashew nuts and raisins can be added.
7. Without any side dish also it tastes awesome.
8. I usually take the quantity of the ingredients as per my taste. So you can always adjust the spices as per your taste.
