These Chocolate Vanilla Cookies are very easy to make. It is crispy, soft inside, rich and buttery in taste. These cookies rock to its core. These cookies are excellent to make for holidays and special occasions..



We made these cookies this week end and we couldn’t stop having it until it is finished. They taste as good as they look.. 25 to 30 minutes is enough to make these cookies. They are well worth the effort..

Coming back to the track after a break..  the reason is quite obvious at least for few among you, I guess.. Let me share it in few words, one of my nieces became a mom of twins, a girl baby and a boy baby.. and her twin sister got married also during this period..  These nieces´ mom is my twin sister Beena.. Confused on it? hehe..  Read again.. will understand..hey, to sum up, we welcomed the third generation of twins to our family..

Ingredients for Chocolate Vanilla Cookies:

All Purpose Flour – 3 cups
Butter – 1 ¼ cups, softened
Powdered Sugar – 1 ½ cups
Eggs – 2 nos
Vanilla extract – 1 ½ tsp.
Baking Powder – 1 tsp.
Cocoa Powder unsweetened and sifted – ¼ cup
Salt – 2 pinches

How to Make Chocolate Butter Cookies:

Grease two baking trays. If you want, you can line it with baking paper. Sift the flour and cocoa powder and keep aside.

Take a large mixing bowl, cream the Butter and Sugar until light and fluffy. Next add Eggs and Vanilla extract and blend well. Take another bowl and combine flour, salt and baking powder. With a mixer, gradually add the flour mixture to the creamed mixture. Mix it on low speed until just combined. Divide the dough into 2 equal portions. Blend well the cocoa powder into one portion. You will now have two bowls of different coloured and flavoured mixture. Refrigerate the two portions for at least 1 hour.

Take a piping bag with star nozzle and carefully spoon a small portion of the dough down one side of the piping bag and then spoon the chocolate mixture down the other side. Pipe the mixture to small pretty swirls of cookies on to the greased tray, spacing them about two inches apart. Freeze the cookies for about 15 minutes. By this time, pre-heat the oven to 325 degree F or 165 degree C for 10 minutes. Bake the cookies for 10 to 15 minutes, until they are a pale golden colour, depending on thickness and shape. Rotate the baking tray halfway through baking time.

Start checking for doneness early. Do not let the cookies brown. The proper cookies will have slightly golden brown bottoms. Leave the cookies for a few minutes on the baking sheets to firm up slightly and then transfer to a wire rack to cool completely.

Your Chocolate Vanilla Cookies are now ready. Store these cookies in an airtight containers.

My Recipe Notes on Chocolate Vanilla Cookies:

1. All ingredients should be at room temperature.
2. Vegetarians can use milk instead of eggs.
3. Freezing the cookies will hold its shape while they bake and it will not spread out.
4. Don’t beat the dough so much once the dough is incorporated. If you see any dry crumbs at the bottom or on the sides, stop until it disappears in the dough.
5. Don’t overfill the piping bag or else, piping will be very difficult and your bag may split under the pressure. When you fill the piping bag, stand the bag in a pint glass to help steady the bag.
6. You will feel the cookies very soft and under-baked until they cool.
7. Adjust baking time if your cookies are smaller or larger ones.
8. Keep the cookies uniform in size, so that they cook evenly.
9. This recipe makes so many cookies. If you want you can halve the ingredients to fit your needs. If you find that you have excess dough, you can keep it in the freezer wrapping with a plastic sheet or in the zip lock bag. It will remain fresh for two weeks.
