Am I getting more addicted to desserts now days?!! Here is another one of my favourite desserts. Kheer or pudding is an integral part of menu during festive days in India and on special occasions. I love this Badam Kheer. I learned how to make badham kheer from a north Indian friend when I was in Nagpur. Since it’s quite simple to make I started to make it on birthdays or for get together.
Badam in Hindi means almond and kheer is pudding. I love its creamy texture. For me and for almost all Indians, Almond Kheer is something so special, we love to make it on festive days.. The word ‘kheer’ is derived from the Sanskrit word ksheer which means milk. Kheer is an integral part of Indian cooking. Everybody has their own style of making kheer though it doesn’t have many variations. Some people add condensed milk, some add ghee.. It’s all your likeness. Milk, Saffron, Cardamom are the ingredients we find in almost all types of kheer. We make different kinds of kheer., rice kheer,poppy seeds kheer, paneer kheer, moong dal kheer, vermicelli kheer, cashewnut kheer.. The list is endless. Kheer can be made with fruits also.
Milk and almond are the basic ingredients in this almond pudding. Saffron and cardamom gives an extra flavour here. Because of it’s high energy and as it is a healthy dish you can give to the kids. I am sure that they would love it and will definitely ask for more and mor
Badam Milk is a very popular drink in India and is loved and enjoyed by everyone in India. Badam kheer is thicker and creamier one than Badam Milk. It can be served during winter and summer seasons. It can be served either warm or chilled.
It is quite simple to make and so everyone can make it irrespective of ages. It is a healthy dessert dish which doesn’t need so much expertise. It is prepared with ground almonds after soaking almonds in water and then ground it and making a paste. You can even mix condensed milk in this which gives a wonderful taste. This time I have added condensed milk as unusual. If you have a get together or a party, you can prepare this in advance and refrigerate it.
Serves – 6 persons
Ingredient for Almond Pudding:
Almonds / Badam (blanched) – ¼ to ½ cup
Cashew nuts – 5 or 6 numbers (optional)
Milk – 2 ½ cups
Sugar – ¼ cup
Condensed Milk – 4 tbsp.
Cardamom – 1
Ghee – 2 tsp.
Saffron – a few strands
How to Make Badam Kheer
Soak almonds in hot water for 30 minutes. Drain it and peel the skin off. Grind the soaked almonds and cashews into a fine smooth paste with little milk and keep aside.
Place a thick bottom pan on the stove and add milk and boil it. Keep on stirring the milk to avoid burning at the bottom. Now lower the flame and add saffron strands. Stir the milk well till it reduces to 1/3 of the quantity. Add the ground almond paste and sugar to this and stir well. Allow it to boil and then reduce the flame. Keep on stirring to avoid burned bottom and everything is well dissolved.
Let it boil for another couple of minutes until the milk thickens or until you get the desired consistency. Add the ground cardamom and stir well. Turn off the heat and let it cool at room temperature.
Refrigerate it if you want it to be chilled. Garnish it with the pieces of badam. Badam kheer is ready for serving.
My Recipe Notes on Almond Pudding:
1. If you are in hurry and no time to soak almond, add almonds in a bowl of boiling water and keep it for 5 minutes. Drain it and peel it off. If it’s difficult to remove its skin, you can repeat the process.
2. This dessert can be served warm or chilled. I prefer the chilled one.
3. Adjust the sweetness as per your taste.
4. This dessert gets thickened once it cools down. In such case adjust the consistency by adding little milk.
5. If you are using condensed milk and sugar, beware of the sweetness of the dish.
6. Those who prefer to add sago, you can.
7. Powdered almonds also work fine.
8. You should add sugar only at the end, otherwise it will curdle.
9. You can store it in the refrigerator for two or three days.
10. Don’t forget to soak almonds for 30 minutes.
