These days many people around the world are turning away from store bought wines and switching back to homemade wines!! Wine making is a time consuming process though most of the ingredients used are simple and easily accessible. Celebration of Christmas is incomplete without a wine.
Rose Apples have got many health benefits. It is a good source of Vitamin A. It has the ability to detoxify the liver. It improves the immune system and digestion, protects against diabetes, beautifies the skin.

So today, let us see how to make Homemade Bell Fruit Wine. I am indebted to my friend Beena Varghese for this Rose Apple Wine Recipe.
Here I am presenting a simple wine recipe. The Bell Fruit / Rose Apple used here for its preparation is easily available in most of the Kerala homes. This fruit is known in different names in different parts of the world which includes Love Apple, Jamrul, Bell Fruit, Water Apple, Java Apple, Jamaican Apple, Wax Apple etc., though it is neither related to apples nor roses. The popular name is Jambu. It is known as Chambakka in Malayalam. Love to hear its botanical name? It is Syzygium Samarangense. Difficult to read it, rt? Ohh, leave it.. Whatever the name we call, it is available in red, white and pink colour. And we all love to have it directly from the tree, rt? Who doesn’t like to have a taste of this fruit?
Though it is a common fruit we get to see in Kerala, most of us are not aware that we can prepare wine out of it.
So here we go..
Ingredients for Rose Apple Wine:
Bell Fruit / Chambakka – 1 kg (ripe properly, pitted)
Water – 1 litre
Sugar – ½ – ¾ kg
Yeast – ¾ tsp.
Dried Ginger, crushed – ½ ” piece
Wheat Kernels – 1 tbsp.
Cloves – 2
Beetroot grated – one small.
How to Make Bell Fruit Wine:
Separate the bell fruits from its stem. Wash it thoroughly and pat dry it. Slit open it and remove the seeds out of it and discard it. Grate the beetroot and take juice out of it. Strain it through a sieve or by using a muslin cloth.
Take a big pot and add bell fruits / rose apples in to it. Crush it well with a masher. Add sugar and water. Switch on the stove and let the whole content come to a boil. Towards the end of boiling add the beetroot juice. It will take about five minutes. Stop boiling this mix once the sugar is completely dissolved in water and the quantity is reduced to ¾ th. Switch off the stove and keep it aside. Let it cool completely.
Once it is completely cooled, add yeast, wheat kernels, cloves and dried ginger. Stir it well with a wooden spoon. Transfer the content to glass jar or ceramic jar and close the jar tightly. The duration required for its fermentation is 21 days. Once in every alternative day open the lid and stir the mixture with a wooden spoon. On the 21st day strain the mixture using a muslin cloth. Clean the left over sediments in the jar and pat dry it. Repeat this process for the next two or three days. Now yoyr Homemade Chambakka Wine is ready for serving.

My Recipe Notes on Chambakka Wine:
1. Get fresh bell fruits for getting good quality wine.
2. Rose apples should be completely immersed in water.
3. When it starts boiling itself you will start seeing pink colour.
4. A germ-free environment is highly required. Hence maintaining hygiene throughout the process of making grape wine is very much necessary.
5. Don’t keep any sour fruits near to the wine mixture or else the wine mixture will turn sour.
6. If you feel any sort of dizziness after having this wine, switch immediately to having water. Or else, drink lots of water before drinking wine.
7. Keep stirring the mixture for 21 days with clean wooden ladle. If you miss to stir in between, nothing to worry. But make it a point to stir it daily.
