Who is going to give me a Valentine Card today other that my better half? 😉 It is said that Valentine’s Day cards are the second most popular card, sending holiday after Christmas. Wow!! That’s great.

I didn’t add any toppings since I love to see and to have this Red Velvet Cake without any frostings.. I felt it to be simple for this Valentine Day.. You can add any frostings that you like.
Make this simple cup cake and show your valentine that you care for him.

Preparation Time – 15 minutes
Baking Time: 20 Minutes
Yield – 2 dozen cupcakes.

Ingredients for Making Red Velvet Cup Cakes:

All Purpose Flour – 2 ¾ cups
Sugar – 1 ½ cups
Baking Soda – 1 tsp.
Baking Powder – 1 tsp.
Salt – ¼ tsp.
Bottled Red food colouring – ¼ tsp.
Eggs – 2 nos. , at room temperature.
Butter – ½ cup at room temperature.
Vanilla Extract – 1 tsp.
Buttermilk – 1 cup
Vinegar – 1 tsp.
Sweetened Cocoa Powder – 2 tsp.

How to Make Valentine Red Velvet Cup Cake:

Coat a cup cake tin with butter or cooking spray. Dust it with flour and tap out the excess flour.
Preheat Oven to 350 degree F / 175 degree Celsius / Gas Mark 4. Keep the cake tin in the middle of the oven.

Take a medium big bowl and sift together all-purpose flour, Baking soda, Baking powder, cocoa powder and salt. Whisk together all these ingredients.

In another bowl whisk together vinegar, buttermilk, vanilla extract and red food colouring. In an electric mixer beat together butter and sugar for few minutes on medium speed until light and fluffy. Now add the eggs, one at a time and beat well until everything incorporated. Add half of the dry ingredients. Mix it well. Then add half of the wet ingredients. Continue adding dry and wet pattern. Now scoop into cupcake tin, about ¾th of the tin. Bake for 20 minutes or until a toothpick inserted comes out clean. Remove from oven and keep it on a wire rack for complete cooling. To serve, frost the cake with whipped topping.

My Recipe Notes on Red Velvet Cup Cake:

1. Line the bottom of the cake tin with parchment paper and butter or spray the paper. Using a non-stick spray with flour in it or buttering the pan and dusting it with flour makes the cake much easier to remove from the cake tin.
2. Make sure all your ingredients are at room temperature. That makes a lot of difference to the final outcome.
3. The Pound Cake can be covered well with plastic wrap or in an airtight container and stored for several days at room temperature, for one week when refrigerated, or it can be frozen for two months.
4. Serve it either dusted with powdered sugar or with a coat of icing, your kids will love it..
