Beef Carbonnade Recipe / Carbonnade Flamande Recipe / Carbonnade of Beef – Slow Cooker Recipe / Belgium Beef and Beer Stew / Beef Carbonade with Vegetables

Beef Carbonnade or Beef Carbonnade Flamande is a traditional Belgian / French beef and onion stew made with beer and seasoned with thyme and bay leaves. Often we add carrot or Mushroom with this. Beef Carbonnade, here, the beef is simmered in onion, beer, spices and vinegar.




One of my colleagues taught me how to make Beef Carbonade when we were in Kinshasa, a Belgian Colony before. It is more associated with a classic Belgian dish. This Beef Carbonade is widely available in Kinshasa restaurants.

The kind of beer used is important, depends on the likeness of you. Beef Carbonnade is often accompanied by Boiled Potatoes or French Fries (my favourite, Reji always make it sure to order a pack of extra French Fries for me every time when we go for KFC.. )

Ingredients for Carbonnade Flamande Recipe:

Beef – 1 kg (lean and boneless)
Bacon – 2 Slices, finely diced (100 grams)
Carrots – ½ kg
Onion – 3 big (chopped)
Beef broth – 1 cup
Garlic – 5 (minced)
All-Purpose Flour – 2 tbsp.
White Wine Vinegar – 1 ½ tbsp.
Brown Sugar – ½ to 1 tsp.
Salt – to taste
White Pepper Powder – to taste
Thyme dried – ½ tsp.
Bay Leaf – 2 small
Beer – 750 ml.
Unsalted Butter – 2 tbsp.
Vegetable Oil

How to Make Beef Carbonnade:

Dice the Beef and clean it in running water. Peel the Carrots and blanch it for five minutes in salted boiling water and drain it. Mince the Garlic. Chop the Onion.

Season the beef with Salt and Pepper. Roll it in the All-Purpose Flour to form a light coating. Heat Vegetable Oil in a non-stick pan over high heat. Sauté the Beef until browned all over. Remove it with a slotted spoon. Keep it aside.

Reduce the heat and add the Unsalted Butter. Sauté Bacon just for two minutes. Next add the chopped Onion and sauté it. Next add the Salt and Pepper, blanched Carrot and simmer it for about half an hour or until softened. Next add the minced Garlic and sauté for few seconds. Add Sugar, Thyme, Bay Leaf and Vinegar. Cook for about a minute. Pour in the Beer. Mix well and taste the mixture. If necessary, adjust the seasoning. Add in the seasoned and sautéed Beef to this. Add the Beef Broth and mix. Bring to a boil. Transfer this to an oven proof pan and cover it with its lid. Place it in the oven. Bake it at 325 ® for about 2 hours or until the Beef is tender. Discard the Bay Leaf.

Beef Carbonnade / Carbonnade a la Flamande is ready now to be served. You can serve it wither with Noodles or with toasted Bread.


My Recipe Notes on Beef Carbonade:

1. Cut away the excess fat from the Beef.
2. You can even add 2 medium sized diced Potatoes to enhance the taste.
3. You can use White Sugar instead of Brown Sugar.
4. Adjust the Pepper Powder as per your tolerance level.
5. Before serving, discard any fat from cooking liquid.

Serve Beef Carbonade with French Fries, Toasted Bread or with Noodles..
