Long Beans Stir Fry / Kerala Style Long Beans Stir Fry Recipe / Pacha Payar Mezhukkupuratti / Achinga Payar Stir Fry Recipe / Valli Payar Stir Fry.

Long beans also known as yard long beans in Chinese or asparagus beans, snake beans and Valli Payaror Achinga Payar in Malayalam. These are rich in fibre. It is an excellent source of Protein, Vitamin A, C, Iron, Calsium, Folic Acid and Potassium. It enhancs skin complexion too, Hey, try it out to get a good complexion..

When it comes to this vegetable I have fond memories. My dad’s sister who lives in Mamoodu, in Kerala was having its cultivation. When I went there I too joined with my aunt to pluck the beans. My aunt cooked it on the same day. Today I am sharing her recipe here. My mom was having cultivation of this vegetable earlier on the terrace of our building. That time also I used to pluck it. Somebody putting all the effort and then simply plucking its fruit is quite an easy and lovely job, isn’t it? 

Sautéing these long beans with coconut, garlic, dry red chillies makes it extra superb. You get to Bite crunchy coconut pieces in between which make this side dish superb.

It is very tasty and easy recipe to make.

Here goes the recipe of Achinga Payar Mezhukkupuratti / Long Beans Stir Fry

Serves: 3

Ingredients For Long Beans Stir Fry:

1 bunch of long beans (250 grams, depends)
½ cup of freshly sliced coconut bites.
½ cup freshly cut Coconut pieces
3 Garlic Cloves, crushed
½ tsp. Turmeric Powder
1 tsp. Red Chilly Powder
3 tbsp. Oil
1 Dry Red Chily.
1 Sprig Curry Leaves
Salt to taste.




How to Make Achinga Payar Mezhukkupuratti / Long Beans Stir Fry:

Remove the ends of beans with your hands or with a knife. Cut them into 1″ pieces. Set aside. Cut the Shallots and keep it aside.

Heat oil in a pan. Add the crushed garlic and dry red chilly. Sauté it. Add the Shallots and sauté it till it turns golden colour. Add the Curry leaves. Now add the Turmeric Powder and sauté it. Add the chopped long beans. Sauté it for a while.
If you find it is dry, sprinkle little water and mix until beans is cooked. Serve it with hot rice.

My Recipe Notes on Vallipayar Mezhukkupuratti:

1. You can use coconut oil to get its authentic taste.
2. You can add slit Green Chillies instead of Red Chilly Powder or Chilly Flakes.
3. Try to use fresh long beans.
4. Adjust the spices as per your taste buds.
