Fish Molee, as everybody knows is a very popular side dish of kerala. Molee / Molly is a name given to girls in kerala homes!! That’s the funny part of this word when it relates to the fish. Molee means, stew where fish is stewed in Coconut milk and hence its name Fish Molee.

We make this specially on festive days and on special occasions like Christmas and Easter..

It’s a comforting food and its origin is from Portugal and later spread to Kerala and other Asian countries!! Now it is a common dish in Singapore too.

Different parts of Kerala make this dish in a different way. You can make it either by using Pepper powder or Green chillies. If you are using chilly powder the dish will turn little reddish and it changes from its authentic creamy look.

It’s a very easy and super delicious preparation of fish. This Syrian Christian dish is prepared first by shallow frying and then cooked in coconut based gravy. Coconut is its main ingredient and so here coconut flavor dominates Fish Molee’s taste.. Lots of onions and fresh curry leaves are needed for this dish and it gives altogether a wonderful yummy flavor. The pepper powder gives the dish a distinct flavor and it drools with Homemade Bread, Palappam or Appam, Vellayappam or Kallappam, Idiyappam, South Indian breakfast dishes made with rice, coconut and yeast.

Ingredients for Kerala Style Fish Molee:

For Marination:

Fish Fillets – ½ kg
Pepper Powder – 1 ½ tsp.
Turmeric Powder – ¼ tsp.
Salt – to taste
Vinegar or lemon juice – 1 tsp.

For the gravy:

Onion big – 3 medium sized (julienned)
Tomato – 2 medium sized (chopped)
Green Chilly – 5 small (slit)
Homemade Ginger Garlic Paste – 1 tbsp.
Curry Leaves – 2 sprigs
Cardamom – 4 small
Cinnamon – 1″ piece
Cloves – 4
Dry Red Chilly – 1
Thin Coconut Milk – 2 cups (refer to notes)
Thick Coconut milk – 1 cup
Coconut Oil – 2 tbsp.
Corn flour – 1 tsp. (optional)

How to Make Fish Molly / Fish Stew:

Marinate the fish pieces with pepper powder, turmeric powder, lemon juice and salt.

Heat Coconut oil in a pan and shallow fry the fish fillets on both sides. (for two minutes on each side). Remove the fish and keep it aside.

Heat oil in the same pan. Splutter Cinnamon, Cardamom and Cloves. Next add the sliced onions and fry till it gets translucent. Add green chilly and curry leaves and mix well. Now add Homemade Ginger Garlic Pasteand sauté it till its raw smell goes. Then add chopped tomatoes along with little salt and ¼ tsp of turmeric powder and sauté well until tomatoes get pulpy. Once the tomatoes are cooked well, add the thin coconut milk. Close the lid and let it come to a boil on medium heat. At this stage add the semi fried fish pieces. Cook it covered on medium flame for 5 minutes till the gravy come to boil and starts to thicken. Finally pour thick coconut milk and simmer for another 2 minutes. Stir carefully or swirl the pan to mix in the coconut milk. Remove from fire. Don’t bring to boil after adding thick coconut milk. Add the corn flour mixture at this stage to make the gravy little more thicker. Again I say, it’s completely optional. Now it’s done. Check the salt.

Garnish with onion fries and curry leaves. Serve hot with Palappam or Appam, Vellayappam or Kallappam, Homemade Bread, Kerala Style Idiyappam or as a part of a main meal.

My Recipe Notes on Fish Molee:

1. Use fresh and feshy white fish for making this Fis Molly. You can use seer fish, king fish, pomfretes, pearl spot etc.

2. You can use fresh grated coconut, canned coconut milk or coconut powder for making coconut milk as it’s easy to adjust the consistency of the dish as per your requirement.

3. If you are using fresh Coconut milk, take 1 ½ cup thin coconut milk and ¾ cup of thick coconut milk.

4. Adding corn flour will make the gravy thick. Adjust the consistency in that case.

5. Homemade coconut milk is healthier, cheaper and more delicious! For making home made coconut milk from the shredded coconut, heat water (don’t boil), and keep it aside. Add shredded coconut in the blender and add hot water and blend well until thick and creamy. Pour through a colander and then squeeze through a cheese cloth to filter out the coconut pulp. You have the thick coconut milk. Again blend the remaining coconut pulp with equal amout of water . Sieve and squeeze through a muslin cloth again. You have the thick coconut milk.

6. For making thin coconut milk from can, add ½ cup of canned coconut milk to 2 cups of hot water and stir. Thin coconut milk is ready. (I did it this way..)

7. Instead of big onions, you can use pearl onions or shallots / kunjulli.
