Ingredients for Mexican Corn on the Cob:
Corn Cobs – 4
Butter – to taste
Chilli Powder – to taste (depending how spicy you like it)
Salt – to taste
Lime – to taste.
How to Make Mexican Corn on the Cob:</big
Peel down the husks of corn. Rinse it under tap water to remove the silk. Bring a big pot of water to a rolling boil. Insert the corn into the boiling water. Boil the corn for 4 to 5 minutes or until tender. When the corn cobs are boiled and cooked well, remove them from boiling water with tongs.
Take a small bowl and mix the butter, chilli powder and lime. Spread the mix on top of corn on the cobs with a brush. That’s it..
Garnish it with Coriander leaves and serve it with lemon wedges immediately. Yummmmm..
My Recipe Notes on Mexican Corn on the Cob:
1. Make sure you have a very large pan for cooking corn on the cob.
2. You can boil corn in its husk, but it will take much longer to cook.
3. Instead of Butter, you can use Mayonnaise (Mayo).
4. If left overs are there, cut the corn kernels off the cob and refrigerate it. When needed, mix it up and reheat it.
5. This could be done the same way if you took the corn kernels off the cob. This should work just fine.
6. I have given it an Indian touch by garnishing with Coriander leaves.
7. Those who love to add cheese, go for the one which you like.
