Palada Pradhaman Recipe / How to Make Palada Payasam.

Palada Pradhaman is an easy and very common dessert dish prepared in every home during Onam.

Onam Sadya or Vishu Sadya is incomplete without varieties of Payasama / Pradhamans. We get to see different varieties of Pradhamans these days. But when it comes to Kerala festivals, the major and common payasams we are used to making for feasts are Kadalaparippu Pradhaman, Cherupayarparippu Payasam, Semiya Payasam or Vermicelli Kheer, Ada Pradhaman, Palada Payasam, and so on.. 

There is difference between Ada Pradhaman and Palada Pradhaman though both sounds the same. 

For Ada Pradhaman, we use jaggery and coconut milk, while we use milk and sugar or condensed milk for making Palada Pradhaman. I love both..  What about you?


Palada Pradhaman is much easier to prepare than Ada Pradhaman. The most indulging factor which attracts me to these payasams is its sweet, rich and creamy texture.

It is a recipe which takes time as it needs continuous stirring. Yes, you need enough patience for this recipe. But the procedure is quite simple and so everyone can make it irrespective of ages. It is a healthy dessert dish which doesn’t need much expertise. It is prepared with minimal number of ingredients like milk, ada, sugar, ghee and cardamom powder. You can even mix condensed milk into this by reducing the amount of sugar, which would give it a wonderful taste. But this time, I didn’t add condensed milk as I didn’t want to change the original colour of this pal payasam, which is off white.

It came out so tasty. Once Reji gives me a positive feedback, then I keep on making it. That’s my usual way of doing things. Now you can guess what Reji’s opinion on this after having this..  

Here goes the recipe of Palada Payasam..

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 5
Recipe Type: Dessert

Ingredients for Making Palada Pradhaman:

Full Fat Milk – 1 litre
Rice Ada Mix – 200 grams (I have used readymade Palada Mix)
Sugar – 2 tbsp. (it was less and I added little more later)
Cardamom Powder – ½ tsp.
Ghee – 2 tbsp.
Cashews – 1 tbsp. (optional)
Raisins – 1 tbsp. (optional)
Saffron strands – few (optional)

How to Make Palada Payasam:

Take 1 litre of milk in a non-stick pan. Bring the milk to a boil on a medium low flame. When it starts boiling, add the ada mix (200 grams). Keep stirring. Add in sugar and continue boiling until it thickens and reduced to half. It will take around 30 minutes for the ada to get cooked. Once the milk is reduced in quantity and when you get a thick consistency, add the cardamom Powder. Mix it again. Check the sweetness of the payasam and if needed add more sugar at this point of time. Now if you are adding saffron, add at this point of time and give it a mix. Remove it from the stove and keep it aside.

Heat another pan and keep on the stove on medium low flame. Add 2 tbsp. Ghee in to this. Once it is hot enough, add raisins and give it a stir. Once it is puffed up, remove and add it to the payasam. Just like this add cashews next. Roast cashews till it turns golden brown. Add cashews also to the payasam. Give a nice mix gently. Yummy and delicious Palada Pradhaman is ready to be served now either hot or chilled.

My Recipe Notes and Tips on Palada Pradhaman:

1. Back home mom makes payasams in Uruli (a heavy, braz and thick bottom vessel). I have used a non stick vessel here.
2. This payasam tends to get thicker as it cools down, so adjust the consistency by adding required milk at the time of making. After making this payasam, if you found your payasam very thick, before adding roasted cashews and raisins add ¼ to ½ cup of boiled milk and 1 or 2 tsp. sugar. Mix well gently.
3. Adjust the quantity of sugar as per your taste buds.
4. You can add condensed milk too by reducing sugar, if so, you will get perfectly a creamy texture.
5. You can use crushed cardamom instead of Cardamom Powder.
6. Adding roasted cashews and raisins is completely optional.
