Meat is an inevitable non-veg item for occasions like Christmas and Easter in Kerala and worldwide. This is a common dish we get to see in Kerala Christian marriages. Pork Ularthiyathu is my first Pork dish of this blog, Seenas Food Basket.

Hi all, what’s up guys? A very Happy New Year 2019 to you all.. Wishing you a super-duper Happy and blessed New Year with ‘new life’, ‘new plans’, ‘new dreams’ and ‘new successes. Here´s hoping that all your dreams come true. What are your New Year Resolutions? I have seen this question in Facebook asked by one of my friends Sofia Asan Ali, I wrote, ‘to sleep well’..  Yes, I want to sleep well in this year. I love to stay up late at nights because I use to do all work related to food blog during night mostly and I would call myself ‘a night owl’.. hehe. I feel I’m more productive during nights. What about you? Don’t let those resolutions slip by any chance. Good luck to you with whichever choice you make as your New Year Resolutions to put into effect.

We consider New Year as a start of something better in our lives, right? It is one of the most exciting days of the year. Most of us start our New Year with fresh aim, new beginning and many objectives to be achieved. We do celebrate not only Christmas, but with the same spirit we celebrate New Year too. Christians go to church on 31st December to Thank God for all the blessings He showered during the course of the previous year and to surrender our ways throughout the New Year into His hands. It’s always better to be in the Church at 12 am. I love the ‘Praise and Worship’ section of the night service.

We celebrate it with many customs and traditions and we do enjoy lavish meal and get together. We had this Pork Stir Fry for this New Year. Pork Ularthiyathu / Pork stir fry is one of my favourite non-veg dishes, and Reji is not a fan of this one. That’s the reason I hardly include this item in my shopping list. I got to know from Mr. Baby Pallippadan, one of our friends in Kinshasa about the super market, where we get the best pork. It comes twice in a day there. Before that I was totally ignorant about the availability of pork there.

Anyway, let us come back to the recipe of Pork Ularthiyathu.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Servings: 8
Calories: 363 / 1 cup

Ingredients for Pork Dry Fry Kerala Style:

Pork – 1 kg, cut into cubes
Coconut Bits / Thenga kothu – 1 cup
Onions – 2 big, sliced
Shallots – ½ cup, crushed
Green Chillies – 2, chopped
Ginger minced – 1 ½ tbsp.
Garlic minced – 1 ½ tbsp.
Meat Masala Powder – 4 tbsp.
Homemade Garam Masala Powder – 1 tsp.
Black Pepper Powder – 2 tsp.
Vinegar – 1 ½ tsp.
Salt – to taste
Water – ½ cup

To Temper:

Coconut Oil – 2 tbsp.
Mustard Seeds – 1 tsp.
Fennel Seeds – 1 tsp.
Curry Leaves – 2 sprigs

How to Make Kerala Pork Olathiyathu:

Take a mixing bowl and add 2 table spoons of Meat Masala, 1 table spoon minced Ginger, 1 table spoon minced Garlic, 1 Green Chilli, 1 tsp. Black Pepper Powder, 1 ½ tsp Vinegar and Salt and mix with a slotted spoon. Add the Pork and mix everything together and marinate and refrigerate it for about half an hour.

Pressure cook Pork by adding ¼ cup of water or less than that on high flame till the first whistle and then reduce the flame to low and cook for another two more whistles or until the meat is 70 % cooked. Keep the cooker closed until the pressure drops.

Heat Coconut Oil in a wide pan. Splutter Mustard Seeds and then add Fennel Seeds. Add Coconut bits / thenga kothu and stir fry until coconut pieces are light brown. Add sliced onion, pearl onion / shallots, the rest of the rest of the minced ginger, minced garlic, 1 green chilli and curry leaves. Stir fry until onions become golden brown. Reduce the flame to low and add the rest of the Meat Masala Powder and the Garam Masala Powder. Sauté it for a couple of minutes. Make sure not to burn the masala. Do a taste test and if required, add more masala while roasting.

Add the cooked pork, along with gravy (if there is any), and mix well. Continue stir frying the pork so that the gravy evaporates and the masala gets coated on the meat. Sprinkle Black Pepper powder at this stage. Cover and cook on low flame (to retain the moisture) till the pork is nicely roasted and becomes dark in colour. If needed drizzle oil while stir frying. Serve as a starter or as a side dish with rice.

It goes well with Palappam or Appam, Vellayappam or Kallappam, Homemade Bread, Kerala Vattayappam or Chappathi.

My Recipe Notes on Pork Ularthiyathu:

1. You can also use Pork which has fat. If you are using Pork which has Fat, then you need to use very little oil for stir frying.
2. I have used readymade meat masala. If you don’t have that you can add 1 ½ tbsp. Chilli Powder, 1 ½ tbsp. Coriander Powder, ½ tsp. Turmeric Powder, ½ tsp Cumin Seeds, 2 tsp. Black Pepper Corns, 5 Cloves, 5 Cardamom, 3 inch piece Cinnamon Stick. Powder it all together.
3. Be careful while adding water, as the pork will let out water by itself.
4. Be careful not to overcook the pork or else it will break while stir frying.
5. Adjust spices according to your spice tolerance.
6. The cooking time of pork varies depending on the pork we used. The pork which we get in Kerala has a longer cooking time. So pressure cook accordingly
7. The colour develops as the pork rests, the colour usually darkens by next day or so. The longer you stir fry, the better it tastes.
8. You can store the cooked pork up to one week in the refrigerator and stir fry it when required.
