Kerala Chicken Stew Recipe / Nadan Kozhi Stew.

I started with the idea of posting Rice wine, and then ended up posting Kerala Chicken Stew Recipe / Nadan Kozhi Stew as it requires two more days to finish the processing time of my Rice Wine!! Yes, my Rice Wine is getting ready and hopefully my next recipe on my blog..

Today I am on the write up of Chicken Stew.. Hmm, suddenly something got stuck up in my mind, that´s one of my students’ words about my blog.. By the way, I never ever talk about my blog to my colleagues or to my students or to whoever I met with, unless and until someone touches the topic. One day accidentally I spoke about my blog in one of my classes.. The incident which led me to say something about my blog in the class, it goes like this.. I give printed question papers to all my students for their Class Test Papers (Teachers are supposed to conduct test papers after finishing every chapter). I think I am the only one in my school who give printed question paper to the students for their each and every class test papers.. I don’t write all questions on black board.. 


Coming back to the story once again..

One day I couldn’t make printed question paper available and I started writing all questions from one corner to the other. All students  were totally amazed at this and started looking at each other and whispering something, I could hear it well.. I turned back to them and told them (as if I didn’t realise the reason for the whole sort of perplexed situation). After some time, I started saying, “I do understand the reason for the whole confusion, but it’s not deliberate, but I didn’t get time to finish my work", and that naturally made me to tell them the truth. Then you can just imagine the rest.. How much they were interested in hearing about their ever dear teacher’s blog.. I asked them to stop asking anything more about the blog and to continue with their test paper.  Most of the kids checked through Seenas Food Basket.com on the same day and the next day when I entered the class, all were looking at me with quite different facial expressions and slowly they started talking about my blog!! Again I had to make them under control, though I loved to hear them all. Apparently their opinions about my blog.. I asked them to come to me during the break time.. One thing that astonished me was one of the boy’s (he is a Nigerian boy) remark.. What he said was, Seena Miss, yesterday my mom rushed to the Shoprite Super Market at 8 pm immediately after going through your blog to buy goodies to cook something from your blog!! You could just imagine my happiness which was countless on hearing this!!


It’s so ironic that we could see all around people literally celebrating Christmas without Christ nowadays!! Guys, don’t forget that Jesus is the reason for this season!! I have one Christmas Card with me still, which was given to me by one of my students of yester years.. The words go like this.. The magic of Christmas is not in the presents, but in His presence!!
 

What’s there with this Santa Claus, the white bearded man, the lights, the trees, the gifts etc., etc.? Without Jesus, we could all die in our sins. His birth brought great joy to the world. Prophets had told of His coming hundreds of years before!! The star paved the way for those who were looking for the special child by stopping over Bethlehem!! It’s so important for us Christians to keep the true meaning of Jesus Christ’s birth in focus and reinforce to all.
 

Now, let me come back to my recipe.. Kerala Chicken Stew or any other kind of stew is an essential part of Christmas breakfast for Keralites. I have never seen or had a Christmas, New Year or Easter breakfast without any stew. Usually the accompaniments with this stew are
Palappam or Appam, Vellayappam or Kallappam, Homemade Bread, Pathiri, Puttu or even Oratti. Other stews we make during this season are Fish Molee, Vegetable StewEgg Stew, Potato Stew, Vegetable Stew .. 

Let me come to the recipe of Kerala Chicken Stew

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Recipe Type: Side Dish for Breakfast
Serves: 6

Ingredients for Kerala Chicken Stew:

750 grams Chicken (I have used Chicken Fillets)
10 small Onions, thinly sliced
2 Potatoes, cubed
1 medium sized Carrot, cubed (optional)
¼ cup Green Beans (optional)
1" piece, Ginger, julienned
2 big garlic, crushed
5 green chillies slit
3 green Cardamoms
1 " piece of Cinnamon
4 cloves
One or two pinches of Fennel Seeds
1 small Bay Leaf (optional)
¼ to ½ tsp. Black Pepper Corns
1 can tinned Coconut Milk
3 sprigs of Curry Leaves
2 tsp. Salt (adjust)
1/8 th spoon of Vinegar
2 tbsp. Coconut Oil
 

How to Make Kerala Chicken Stew:

Cut, wash and clean chicken. Keep it aside. Using a mortar and pestle crush cardamom, cinnamon, cloves, and little peppercorns and keep it aside. Crush garlic too and keep it aside. Heat coconut oil in a non-stick pan. Add the crushed spices, bay leaf and sauté it for few seconds. Then add the crushed garlic and sauté till the raw flavour of garlic is gone. Next add the ginger followed by onion, curry leaves and split green chillies. Sauté it after adding each ingredient for few seconds and till onion becomes soft and translucent.

Next add the chicken pieces and mix well with onion and all sautéed spices. Add little salt at this stage and mix well. Next add potato cubes and mix well, followed by chopped carrots. Cook it for a while. Then add green peas and mix it. Now add the thin coconut milk (see my recipe notes), mix it well and close the pan and cook till the chicken, potato and carrots are done. At this stage add vinegar and mix well.

Once you are sure that everything is completely cooked, add the thick coconut milk. Open the pan and do check the salt. Add it again if necessary. Mix well and simmer it again for two minutes or until you get the right consistency of the stew.
 

My Recipe Notes and Tips on Chicken Ishtu:

1. Using coconut milk enhances the flavour and taste. You can use fresh coconut or store bought coconut powder to make coconut milk. I have used tinned coconut milk. For getting second coconut milk, I have diluted tinned coconut milk by adding 1 ½ cups of water to ½ cup of tinned coconut milk.

2. Homemade Coconut Milk - For getting the first thick coconut milk, add 1 cup shredded coconut with 1 cup water and blend it well for about one minute. Filter it and your thick coconut milk is ready. Use the strained coconut and 1 cup of water and blend for another one minute. Now extract the thin coconut milk.

3. You can marinate chicken fillets for one hour minimum with little salt and pepper powder.

4. You can use Bone - in - Chicken too for this.. 

5. Adding carrot, green peas and vinegar is completely optional.

6. Adding coconut oil gives an authentic taste to the dish.

7. It totally depends on how rich or mild you want this curry to be. If you want a rich stew, increase the amount of first extract of coconut milk.

8. This Chicken Stew Recipe / Nadan Kozhi Stew gets its’ spiciness from Black Pepper and Green chillies. You can use either both or only one as per your choice.

9. I have used frozen green peas. If you are using dried green peas, soak in water minimum for 6 hours and pressure cook it until it is done.
