Hi all, hope you all are doing great and preparing for Onam. It’s high time that I posted something in my blog and many have started asking me the reasons. Well, it was because I have been on vacation, travelling to some beautiful places in Europe for the last two weeks. Now in the last leg of the tour. I was having difficulties getting back to blogging in between.

Here I am on Onam to say ‘Hi’ to you all and to post my favourite Cucumber Pachadi recipe here.

No words can describe this yummy, delicious, healthy and ever-loving side dish of Malayalees. It’s a very must recipe for any vegetarian sadyas / feasts. Of course it’s a very much wanted side dish of Kerala Sadya Recipes

 
If you have a fresh cucumber and little curd in your hand you can make it very fast.

Other ingredients like mustard, curry leaves, green chilly etc. are mostly common and available items in everybody’s kitchen. You can make this ever drooling cucumber pachadi within no time.
 

Cucumber has got so many medicinal values as it contains many vitamins, folic acid, iron Potassium, zinc etc.

I can have rice with this pachadi and any one of pickles.

Here goes the recipe of Cucumber Pachadi.
 
 

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 4
Calories: 31 / 75 grams

Ingredients for Cucumber Pachadi:

Cucumber – one medium sized
Coconut grated – 1 cup
Ginger – 1” piece
Plain sour Yogurt – ½ cup
Green Chilly – 1
Salt – to taste
Coconut Oil – 1 tbsp.
Mustard Seeds – 1 tsp.
Dry Red Chilly - 1
Shallots – 2 nr.
Curry Leaves – 1 sprig

How to Make Vellarikka Pachadi:


Peel the cucumber, discard the seeds and cut it into small cubes. Grind coconut, mustard, green chilly and ginger in to a smooth paste by adding 1 tbsp. of water or yogurt.

Cook cucumber with little water and salt. Add the ground coconut paste to this and let it come to boil on a low flame. Remove from heat and allow it to cool completely.Once it cools down, add yogurt / curd and if necessary add little more salt to this.

In a kadai, do the seasoning with oil, mustard seeds, dry red chilly, shallots and curry leaves in order. Pour this seasoning over the pachadi. Your cucumber pachadi is ready now for serving.

Enjoy Onam with this simple Cucumber Pachadi. Happy Onam to you all..

My Recipe Notes and Tips on Cucumber Pachadi:

1. Adjust spice level to suit your taste.
2. Adjust gravy consistency as per your requirement.
3. Use only sour yogurt to make this pachadi.
