My first adventure with Zucchini!  I never thought this would come out so tasty.. I have never had this appetizer before and it was totally a new experience with this appetiser and I really enjoyed making this dish as well as the outcome.. It is good for health because of its fibre content, protein, fat and calories.

Zuchini, is also called courgette cumber which belongs to the cucumber family and looks like cucumber. It is an ideal one for summer. It has a delicate shell and creamy white flesh and is available in different shapes, colour, flavour and texture.

Baked Cheesy Zucchini Bites..

Today is our Wedding Anniversary and we have not yet planned anything special..  You must be wondering I made just an appetizer on this day.. No dears.. This one I made long back and am going to post it today; our special day.. I was quite not sure whether the taste would be liked by us.. But it was so tasty and we will make it again for sure. Hope next time I will get better pictures than this..

There are many ways to make zucchini which ranges from sweet, to spicy to savoury. I made this as an evening snack and both of us liked its taste. So, if you haven’t tried these yet, they are a ‘must try dish’.

This is quite simple to make and everybody can enjoy it.

Preparation Time – 10 minutes

Cooking Time – 20 minutes

Ingredients for Making Cheesy Zucchini Bites:

* Zucchini – 4 medium sized (sliced in half lengthwise.)
* Parmesan cheese – ½ cup
* Olive Oil – as needed.
* Pepper – ½ tsp.
* Salt – to taste
* Rosemary (herb) – ½ tsp.
* Thyme – ½ tsp.

Method of Making Baked Zucchini Bites:

* Pre-heat oven to 350 degree F / 175 degree C.
* Cut zucchini in to halves. Lightly brush both sides of the zucchini with olive oil.
* Take the baking pan and place aluminium foil on it.
* In a small bowl take parmesan cheese, rose mary and thyme. Mix it well and sprinkle over the zucchini.
* Sprinkle salt and pepper powder.
* Bake until (minimum 15 - 20 minutes) cheese is melted, crispy and golden in colour.

My Recipe Notes on Zucchini Bites:

Even Cheddar Cheese would work fine for this.
