How to Make Vegetable Fried Rice..  

It’s been a long time since I started thinking of posting a Chinese recipe in my blog. For some or the other reasons I have been postponing it. Since Lent is going on for the Christians, What’s the best time to post a veg based recipe for me and for the Christians all over the world as well..

We get to see this popular Indo Chinese Vegetable Fried Rice in the restaurants and on the streets of India. It is very simple and popular Chinese rice dish and one can make it with minimum ingredients.


To get the real texture of Chinese rice dishes, we have to use the Jasmine rice. Fried rice is usually made of white rice, which is brown rice without its husk. 

But I have seen plain white long grain rice also used in Chinese restaurants.



I have used the plain Jasmine Rice..  If you have short grain rice, try with that also, but usually Japanese /Koreans use medium to short grain rice for their rice of choice.

For even cooking, chop all vegetables in uniform sizes. It is amazing to get the aroma of cooking ginger and garlic which is filled in your kitchen. Immediately after adding ginger and garlic you have to add Carrots and French Beans, as it is the hardest veggies to cook through.

Once you add the rice, keep tossing everything, the veggies, rice, soy sauce, ginger and garlic, sesame oil etc. to pick up all those flavours.


Day old rice is better to use to make vegetable fried rice. The cooked rice should not be in lump form, instead should be individual grains. The rice should be completely cooked, it should not be warm or hot. 

I use sesame oil for Chinese Cuisine, which I also use to make pickles and to wipe my dosa tawas.



This is the best option also to make use of the left over rice and veggies. There are many varieties of fried rice we see in the Chinese Cuisine.

Cooking Time: 15 minutes
Serves: 3


Ingredients for Vegetable Fried Rice:

Day old cooked Rice – 3 cups (grains separated, preferably medium grain)
Ginger – 1 tsp. finely chopped
Garlic – 1 tsp. finely chopped
French Beans – ½ cup, chopped
Carrot – ½ cup, diced
Capsicum green – 1, chopped
Onion – 1, chopped finely
Scallions/Spring Onions/Greens Onions – 2, chopped
Sesame Oil – 1 ½ tbsp..
Salt – to taste
White Pepper Powder – 1 tsp.
Soya Sauce, light– ¾ to 1 tbsp.
Rice Vinegar – 1 tsp. (optional)

How to Make Chinese Vegetable Fried Rice:

Cook Rice with little salt and 1 tsp. oil till they are al dente or just cooked. Spread it on a plate to remove any excess moisture. Keep it aside slightly covered. Clean and chop carrot, capsicum, onion, spring onion and beans. Keep aside.

Heat up a pan with 1 tbsp. sesame oil. Stir fry garlic and ginger until aromatic. Put the flame on medium to high and add in the chopped vegetables and onion. Stir fry until veggies are almost cooked. Add in the chopped onion followed by scallions. Now add in the rice and stir well with the other ingredients. Also add in salt and white pepper powder and toss it well. Add in 1 tsp. rice vinegar and mix everything lightly. Keep stirring for 3 to 4 minutes to warm through the rice and to allow all the flavours to mix together. Stir fry for few minutes till everything has coated the rice well.

Garnish with spring onions. Dish out and serve hot with any Chinese Veg or non-veg dish. We had it with a Chinese Eggplant dish.. A soup dish can also be an accompaniment with this fried rice.

My Recipe Notes and Tips on Chinese Vegetable Fried Rice:

1. If you are using freshly cooked rice and not the day old rice, allow it to cool completely. Make sure the rice should not have any lumps. Add 1tsp. vegetable oil while cooking rice to make them non-sticky and separated.
2. You can use black pepper powder if white is not available.
3. It’s always better to use sesame oil to get the authentic taste of the Vegetable Fried Rice.
4. If you want you can use ½ cup of frozen green peas and one beaten egg also.
5. You can blanch the French beans and carrot first before cooking, as it takes more time to cook.
6. Don’t overcook the vegetables; it should retain its crunchiness.
7. While cooking veggies, toss it continuously for uniform cooking, otherwise it will get burn.
8. Remember, you have cooked rice with salt. Also soy sauce is already having salt in it. So be careful in adding salt while mixing and tossing everything together.
9. Adding vinegar is completely optional. If you don’t have rice vinegar, you can use normal white vinegar.
10. If you prefer to get a hot and sweet taste to your Vegetable Fried Rice, you can add chilli sauce and tomato sauce.
11. If you like, you can add more soy sauce. For a variation, you can add a tsp. of chilli sauce.
