Hi to all my fabulous readers and followers, today I am here to share a satisfactory one pot meal from Chinese Cuisine, Chicken Szhechuan Noodles. It is quite easy to make and is stunningly delicious. Szechuan Noodles are the yummiest option for all Noodle lovers. It’s an excellent high protein food.

When u don’t have time to make side dishes for your main meals, you can go for this one-pot meal Chicken Szechuan Noodles.


Sichuan cuisine, Szechwan cuisine, or Szechuan cuisine is a style of Chinese cuisine originating from Sichuan Province. It has bold flavours, particularly the pungency and spiciness resulting from liberal use of garlic and chili peppers, as well as the unique flavour of Sichuan pepper. There are many local variations within Sichuan Province and the neighbouring Chongqing Municipality, which was part of Sichuan Province. - source: wiki.


The end result is quite well flavoured, so this Szechuan Chicken Noodles does not need any side accompaniment.

Here goes the recipe of Chicken Szechuan Rice Noodles...


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Servings: 2
Calories: 275 / 1 cup

Ingredients for Chicken Szechuan Noodles:

Boneless, skinless Chicken breasts– 100 grams (cut to thin strips)
Olive Oil – 4 tbsp.
Garlic – 2, chopped
Carrot – ½ cup (thin long pieces)
French Beans – 3 (cut in strips)
Cabbage – ½ cup (shredded)
Celery – 2, chopped
Rice Noodles – 150 grams
Szechuan Sauce – ½ cup (I have used readymade sauce)
Green Chilli Sauce – 1 tbsp.
Red Chilli Sauce – 1 tbsp.
Light Soya Sauce – 1 tbsp.
Scallions / Spring Onion – ½ cup

How to Make Hot and Spicy Chicken Szechuan Rice Noodles:

Cook Rice Noodles in the boiling water (100 degree Celsius) for about 3 to 4 minutes or as per the package instructions or until ¾ th done. Drain Noodles and immerse rice noodles in cold water for 1 minute to firm up noodles. Drain it well. Keep it aside. Place the Rice Noodles in a big bowl and add 1 tbsp Olive Oil on the bottom and 1 tbsp on the top and toss noodles well, so that the noodles don’t stick. Keep it aside.

Cut the veggies - Shred the cabbage, julienne the carrots, french beans like match sticks, Chop garlic and Scallions. Fill a pan with 4 cups salted water. Add the chicken and bring to a simmer over medium-high heat. Cook until the chicken is no longer pink inside, for about 10 minutes. Remove chicken from the water and let it cool.

Next, heat 1 tbsp. Oil in a pan on high flame. Add the chopped Garlic and stir fry till just golden. Add the Chicken and toss for a couple of minutes or till golden. Remove to a plate. To the same pan, add 1 more table spoon of Oil and add Carrot, Beans followed by shredded Cabbage and cook till ‘tender crisp’. Add the Green Chilli Sauce, Red Chilli Sauce, Soya Sauce and sauté for a couple of minutes. Sprinkle Salt and toss it.

Now add the cooked Chicken back to the pan and mix in the Rice Noodles and Szechuan Sauce. Pour the Soya Sauce over everything and mix together until the Noodles are well coated by all the sauces.

Remove from heat. So Rice Noodles with Spicy Chicken and Veggies are ready for serving. Garnish with chopped scallions and enjoy!

My Recipe Notes on Szechuan Style Chicken Noodles:

1. To ensure the chicken is fully cooked, it should be cut in to small pieces.
2. You may use Sesame Oil or Sun Bran Oil.
3. Chinese Cast Iron Wok is the best utensil to prepare this dish.
4. Adjust the spices as per your tolerance level.
5. You can add scrambled egg last (optional).
6. Those who are in hurry can prepare noodles, veg, tofu and chicken in advance and refrigerate it until you are ready to cook.
7. For the vegetarians, replace chicken with tofu.
8. Veggies should have a bit of crunch and should not be overcooked.
9. If you are cooking for a large group of people, cook it in batches.
