Cabbage Thoran Recipe / Kerala Style Cabbage Stir Fry with Grated Coconut.

Thoran is a well-known side dish and a part of the main course meal of a Kerala lunch. For Malayalees, Cabbage thoran is a very common accompaniment along with rice, our staple food. It is an unavoidable thoran /stir fry for the Kerala Sadya Recipes-Vishu and Onam.
Thorans can be made from different vegetables and meat. It has so many added advantages; it is an important nutrient in our diet.

Today I am presenting the dish- cabbage thoran which is vital because of its medicinal properties it has. It’s so easy to make. The only time consuming thing for cooking this thoran is the chopping of cabbage in to thin long strips, but if you have a vegetable chopper it’s so easy to prepare within minutes.

Both cabbage and lettuce belong to the same family. Cabbage helps you to reduce the cholesterol level. Since it’s having so much of fibre, it’s very healthy for your body. Sinigrin component in cabbage helps to prevent cancer. If we cook cabbage for a long time, we cannot get the above said benefits. So Raw cabbage will bring more benefits than cooked cabbage!! Many say ` Steamed Cabbage has more health benefits.

Sautéing cabbage is the best way of cooking it instead of steaming and boiling which makes it more watery. I recommend you to follow the saute method to cook cabbage which retains its nutrient values. After cutting cabbage in to slices, keep it for a while in order to retain its nutrient values.

Cabbages are of three main varieties, green, red and purple, but the very commonly consumed variety is green cabbage. Red Cabbage also has health benefits as it contains dietary anti-oxidants.

Adding onion is completely optional. All kerala families have their own way of making this thoran. It goes well with
Kerala Style Sambar or Nadan Moru Kachiyathu.I am sure you will love this thorans wonderful flavour and its ingredients. We also make Beans Thoran in a similar way. Adding coconut marks the speciality of this dish. Since Kerala is a land of coconuts, it is so accessible to add fresh coconut to make this thoran. Every family has their own way of making this dish.  

Preparation Time: 10 minutes
Cooking Time: 15minutes
Serves: 4

Ingredients for Cabbage Thoran:

Cabbage - one medium, finely shredded
Onion - 1, finely sliced
Green Chillies - 2 - finely chopped
Garlic - 2 finely chopped
Coconut grated- 1/2 of one.
Cumin Seeds - 1 tsp.
Turmeric Powder - 1/4 tsp.
Coconut Oil - 1 tbsp.
Mustard Seeds - 1 tsp.
Curry Leaves - 2 sprigs
Salt - to taste

How to Make Cabbage Thoran:

In a bowl, combine well coconut, onion, turmeric powder and little salt with your hand and keep it aside.

In a non-stick pan do the tempering by heating oil followed by adding mustard seeds, cumin seeds, garlic, green chilly and finally curry leaves. Reduce the heat and add the finely chopped cabbage and mix well. When the cabbage becomes translucent, add the already prepared coconut mixture. Add the remaining salt and stir well evenly. Bring all the mixture to the centre to make the cabbage cook with its own moisture. Stir it well for another couple of minutes.

Turn off the heat, remove from the stove.  Serve Cabbage Thoran with hot with steaming rice

My Recipe Notes and Tips on Cabbage Thoran:

1. Every family has their own way of making this thoran. My husband loves it in crispy way. To retain its crispiness don’t cook it for a long time. When the cabbage becomes translucent, cook for another couple of minutes. That’s all.
2. The quantity of  coconut is completely your choice. Without adding coconut also one can make cabbage thoran. Coconut is an integral part of all kinds of thoran in Kerala.
3. Adding onion is optional. Shallots instead of big onion make the dish tastier.
4. You can add Dry red chillies instead of green chillies.
5. You can add chana dal also while te,pering.
6. Do not add water at all else it will turn soggy.
7. I prefer adding coconut oil which gives a great flavour.
