Baby Potatoes are the most loved vegetable of almost all cuisines of the world and a favourite of our homes too. If that is the case with big potatoes, then who can ignore its gorgeous baby ones? I cook it at least once in two weeks and sometimes once in a week.. 

Baby Potatoes look so attractive. They are so sweet looking for our eyes. .. Isn’t it? There is very little chance to go wrong with potato dishes. Baby potatoes transform to a delicious and irresistible one if we cook it either with other vegetables or with any other ingredients and spices.

Baby Potatoes are a rich source of carbohydrate content. Sweet potatoes are rich in Complex Carbohydrates, Dietary Fibre and Beta-Carotene.

Yesterday I saw a sachet of fresh Baby Potatoes in the super market and grabbed it at the first sight. Even after planning today’s menu, I ended up making this Spicy Potato Stir Fry. This dish is marinated with some spices and then dry fried with onion, tomato, ginger and garlic. It was a surprise for me to see how much better it tasted than I imagined!!

This simple and tasty Potato stir fry I made for our lunch as a side dish with steaming bowl of rice and chappathi.

It was devoured by my hubby dear.. So as usual this recipe is fixed as a must to do potato dish of our home.

Preparation Time - 10 minutes
cooking time - 25 minutes
Serves - 4
Calories - 110 / 120 grams

Ingredients for Baby Potato Stir Fry:

Baby Potatoes – ½ kg
Oil – 2 tbsp
Mustard – ¼ tsp
Curry Leaves – 2 sprigs
Ginger – 1 “piece
Garlic – 4 cloves
Tomato – 1
Big Onion – 2
Fennel seeds- 1 tsp
Turmeric powder – ¼ tsp
Chilly Powder – ½ tbsp
Pepper Powder – ¼ tsp
Salt – As required

How to Make Baby Potato Stir Fry:

Wash Baby Potatoes well to remove the dirt. Cook it in a pressure cooker by adding 1 tsp of salt and water enough to cover the baby potatoes. Cover the cooker with the lid and place the weight. Cook the potatoes on high flame for one whistle. Switch off the flame and let the pressure release completely before opening the lid. Drain off the water in a colander. Once the potatoes are cool enough to handle, peel its skin and keep it aside.

In a kadai or pan, dry fry fennel seeds. When it cools down a bit, grind to powder.

In another bowl, take all your spices – Chilly powder, pepper powder, turmeric powder, ground fennel powder and salt. Mix it well with a spoon. Add cooked baby potatoes in to this spice mixture and toss the potatoes gently so that each potato is coated well with spices. Marinate this potatoes minimum for 30 minutes.

In a pan add Oil. When oil is hot enough add mustard seeds. When it cracks, add ginger and garlic. Fry till it’s all mixed well and browned. Then add in Onion and Green chilly. Sauté well till it turns golden brown. Next goes tomato. Simmer for five minutes. Add little salt and mix well till tomatoes get soft. Now add the marinated Baby Potatoes in to this masala mix and stir fry for few minutes. Now it’s done.

Serve Baby Potato Stir Fry with roti or rice after garnishing with coriander leaves.

My Recipe Notes on Baby Potato Stir Fry:

1. My potatoes were weighing 850 grams (26 potatoes). But here to make it easy to understand, I have written the recipe for 500 grams only.
2. You can use Big Potatoes instead of the small ones.
3. Do not rinse hot potatoes under running water as the potatoes will turn soggy.
4. I have used only the basic spices. You can add whatever spices you like.
5. It’s marinated dry without using water or oil since cooked potatoes might get broken while mixing it up.
6. Avoid using spatula while mixing potatoes and spices together for marinating, instead tilt and shake the vessel.
7. Take care not to overcook potatoes.

Straight away from the super market

Take all Ingredients you need
Pressure Cook Potatoes by adding little salt

  Dry Fry Fennel Seeds

Grind to powder

Take all the spices
Mix all spices with a spatula

Add potatoes to the spice mixture, mix well and marinate it

Seasoning mustard

Add Ginger and Garlic

Add Onion

Add Curry Leaves
Add Tomatoes

Add Marinated Potatoes 

Serve Baby Potatoes..
